Potato candy??

 And while I was busy looking at popcorn I found this!? This is from Taste of Home.

                                     Potato Candy

  • 3/4 cup mashed potatoes (prepared without milk and butter)
  • 2 teaspoons butter, softened
  • 1 teaspoon peppermint extract
  • 7-1/2 cups confectioners' sugar
  • 2 cups (12 ounces) semisweet chocolate chips
  • 1 tablespoon shortening

Directions

  • In a large bowl, beat the mashed potatoes, butter and extract until blended. Gradually beat in confectioners' sugar. Press into a foil-lined 13-in. x 9-in. pan.
  • In a microwave, melt chocolate chips and shortening; stir until smooth. Spread over potato mixture. Cover and refrigerate until set. Using foil, lift candy out of pan. Discard foil; cut candy into 1-in. squares. Store in an airtight container. Yield: about 2-3/4 pounds.

Do you also have a recipe for Potato Doughnuts? My mom used to make them but
can't fine her recipe. They were fried in a deep fat fryer.

No sorry! I've never heard of potato doughnuts but that sounds way better than that potato candy! ok. So my daughter got curious about your doughnuts and she looked online and found potato doughnuts & the other one is called Spudnuts! She found it on a site called Allrecipes.com and she said there's only two recipes there. Hope this helps. :)

Sara, just google Potato Doughnuts, and you'll see recipes, and even a link to images of the doughnuts, and some recipes will also be posted there as well.

I believe that York Peppermint Patties are made with mashed potatoes.That's what I have heard anyway????

A few years ago I was watching Paula Deen and she made potato candy.  I think I prefer my candy without potato but I guess with the sugar and the flavoring you would never taste the potato it just acts like a binder.

Gale! You heard that York Peppermint Candies are made from potato?? I've only had that candy once but I would not know that! Are you teasing?Smile

This is what I had heard.I have done research on it and that is the word out on the street. Not sure if it's true or not I'm not sure but when I eat one now it makes sense because of the texture.I think we would be surprised at some of the ingedients used in our foods.

You guys are too much!  You can't taste the potato in the candy. I have never seen potatoes as a listed ingredient  on the York peppermint candy wrapper. Also, the version I make is with peanut butter. This is probably what Lorrie G. makes also.  Wink

When we were kids we made coconut candy with potato and dipped it in chocolate.  It was very good.  The potato acts as a filler and one doesn't taste potato.  I think real needhams are still made with potato.
