SWEET POTATO CASSEROLEIngredients3 cups mashed cooked sweet potatoes3/4 stick melted butter1 cup evaporated milk1 cup white sugar2 eggs beaten1 teaspoon vanilla1 teaspoon cinnamonMix all the above ingredients and bake in a covered casserole 30 minutes in a preheated 400* oven Topping1 cup coconut1/2 cup brown sugar3/4 cup chopped pecans3/4 stick melted butter.Mix above ingredients and spinkle over the top of the sweet potato mixture and bake uncovered an additional 15 mins at 400*I haven't tried this yet but will be for Thanksgiving.This is a recipe from one of my best friends,she hails for El Paso Texas She's a great cook!
Bake the gingerbread according to the package directions; cool completely. Meanwhile, prepare the pudding and set aside to cool. Stir the pumpkin pie filling, sugar, and cardamom into the pudding. Crumble 1 batch of gingerbread into the bottom of a large, pretty bowl. Pour 1/2 of the pudding mixture over the gingerbread, then add a layer of whipped topping. Repeat with the remaining gingerbread, pudding, and whipped topping. Sprinkle of the top with crushed gingersnaps, if desired. Refrigerate overnight. Trifle can be layered in a punch bowl This is a Paula Deen Recipe.I have changed a few things to suit my own tastes.I make my own gingerbread because the box mix is expensive here in my neck of the woods.I use a large can of pure pumpkin and add 1 teaspoon of cinnamon and 1/2 teaspoon of ginger to the pumpkin.This is an awesome recipe and worth the effort of making.Make sure you make this the day before, the colder the better it gives it time to set up and the Flavors to develope
