    SWEET POTATO CASSEROLE

Ingredients

3 cups mashed cooked sweet potatoes
3/4 stick melted butter
1 cup evaporated milk
1 cup white sugar
2 eggs beaten
1 teaspoon vanilla
1 teaspoon cinnamon
Mix all the above ingredients and bake in a covered casserole 30 minutes in a preheated 400* oven

Topping
1 cup coconut
1/2 cup brown sugar
3/4 cup chopped pecans
3/4 stick melted butter.

Mix above ingredients and spinkle over the top of the sweet potato mixture and bake uncovered an additional 15 mins at 400*

I haven't tried this yet but will be for Thanksgiving.This is a recipe from one of my best friends,she hails for El Paso Texas She's a great cook!

My family had sweet potatoes only on Thanksgiving ...... everyone gobbled them so that's weird.
Only canned sweet potatoes were used - dumped into a baking dish with a bit of fake maple syrup, lots of butter, then covered with miniature marshmallows.  Baked until hot - that's it.

Fresh Cranberry Salad

2 bags of fresh cranberries
4 large apples
2 large oranges
2 pkgs.jello,I use black cherry or raspberry the original used lemon but mom liked these two flavors better.
2 Cups sugar,more or less to taste.I would add at least the 2 cups,cranberries are tart.
2 Cups boiling water
1 Cup Chopped walnuts or more if you like.

Wash and pick through cranberries removing any bad ones or stems,core apples leave unpeeled,peel oranges.Grind apples,oranges and cranberries.If you do this in a food processor do not over process or you will have a mess,not the texture you are looking for.
Add 2 Cups boiling water to the jello and sugar stir until dissolved.Add this to the ground cranberry mixture,stir in chopped walnuts.Pour into serving bowl and chill until set.I make this the night before so it sets well.My family likes this served with cool whip on top.

Hi Nacy this is very similar to the way we made it only instead of syrup we used brown sugar.I'm going to try my friends recipe just to have something a little different.my sons love sweet potatoes anyway and they say I never make enough.I'm looking for a good sweet potato pie recipe if anyone cares to share one?

Thanks for this recipe, looks really good...I'll use  black cherry or  raspberry Jello as you suggest; just seems  the perfect  ingredient.
Maybe even use canned, drained mandarin orange segments?and not just for Thanksgiving; any time poultry is served( fried chicken; BBQ chicken or maybe even w/ roast pork or  pork chops  Smile

Jello salad is sorta' like a glass of water for any "special" meal. 
It's just a vital part - it's always there.

JELLO SALAD
Orange jello made according to pkg directions.
Before you cool/jell it you stir in a cup or two of grated carrots and
a small can of crushed pineapple.   That's it.
When it's cold and set it's ready to eat.

If you wanna' get fancy you can stir in a grated red delicious apple.

PUMPKIN GINGERBREAD TRIFLE          
 

Ingredients

  • 2 (14-ounce) packages gingerbread mix (I make my own)
  • 1 (5.1-ounce) box cook-and-serve vanilla pudding mix,not instant
  • 1 (30-ounce) can pumpkin pie filling ( I use pure pumpkin and add spices below)
  • 1/2 cup packed brown sugar (increase to 1 cup if using pure pumpkin)
  • 1/3 teaspoon ground cardamom or cinnamon (If using pure pumpkin I add 1 teaspoon of cinnamon and 1/2 teaspoon ginger)
  • 1 (12-ounce) container frozen whipped topping
  • 1/2 cup gingersnaps, optional

Directions

Bake the gingerbread according to the package directions; cool completely. Meanwhile, prepare the pudding and set aside to cool. Stir the pumpkin pie filling, sugar, and cardamom into the pudding. Crumble 1 batch of gingerbread into the bottom of a large, pretty bowl. Pour 1/2 of the pudding mixture over the gingerbread, then add a layer of whipped topping. Repeat with the remaining gingerbread, pudding, and whipped topping. Sprinkle of the top with crushed gingersnaps, if desired. Refrigerate overnight. Trifle can be layered in a punch bowl This is a Paula Deen Recipe.I have changed a few things to suit my own tastes.I make my own gingerbread because the box mix is expensive here in my neck of the woods.I use a large can of pure pumpkin and add 1 teaspoon of cinnamon and 1/2 teaspoon of ginger to the pumpkin.This is an awesome recipe and worth the effort of making.Make sure you make this the day before, the colder the better it gives it time to set up and the Flavors to develope

Gale...I think my heart stopped when I read your casserole recipe.  Not just because it sounds so gosh darned good but all the butter and sugar....I would make this but I would be the only one to eat it.

My daughter makes a side dish with pineapple, grated cheddar cheese some flour then the topping is Ritz crackers and butter.  She has yet to give me the exact recipe, I am sure I would find it on line is I truly wanted to but I tease her about it every year.  I don't know how long she bakes it but I like it baked a lot longer so when I take leftovers I always bake it about another 25 to 30 minutes.

My Mom and Grandma used to put stuffing in a pan and cook it with the turkey and it turned out very dry and crumbly and I loved to pour gravy over it to moisten it.  I have tried all sorts of ways to make it but I just can't get it just right.

I will probably cut down on the sugar and butter when I make this but I wanted to post it as it was given to me.But It sure does sound good and I have some coconut here that needs to be used up.This will be a new one for me.I don't eat much of anything anymore just taste I get full so fast,but the guys around here sure can shovel it in.I always add broth to any dressing outside the bird and it stays pretty moist but we always put gravy on that too.
