GARDEN FERTILIZER ! Smile My mother had the most beautiful roses due to fish remains and unwanted Carp, Sheep head and catfish  from our many fishing trips ( Every Weekend ) The Asian Carp are a problem in many area lakes.Carp are eaten in Asia and Eastern Europe,I know that only certain types are eaten in Hungary.I'm not a Cat Fish eater but the Swai is good,the only reason I tasted it because the price was right and I'm trying to incorporate more fish into our diets.It was a very pleasant surprise.I see that Tilapia is the number one most eaten fish in America,but the fat it contains is not very healthy,that's scary.I personally don't care for Tilapia so for me no problem.

I really like this fish. I sprinkle with lemony fresh dill blend and put
thin sliced meyer lemons on top and grill it. Does not taste like
catfish. It has a real mild flavor.

Being in the catfish family this was a pleasant surprise.It is a mild fish and the good news is that it is high in Omega 3.so it's good for you.

I've always thought of meat and fish served in a savory manner and I was always affaid to try fruit on meat or fish.The last meal we had out at a local rib joint,there was salmon with mango salsa.My niece ordered it and I thought to myself oh just try this.I did and I can't wait to eat this again I've made it once like this and I think about it all the time! It was so wonderful.Mango salsa rules!!! lol

Gale, I make fresh mango salsa all the time for salmon. I love the taste of
it with any kind of fish except for fish that is fried. It is low in calories and
really helps with my diet!!!

Yes, I've eaten Swai a few years ago. I didn't like the way it was cooked. It was dipped in a batter and fried and the fish wasn't cooked enough for me. In my opinion it is a white fish that doesn't have a lot of taste. Maybe I can try the website that Dave suggested and get some good, flavorful recipes. Always looking for good fish recipes.

Try grilling the pineapple.  Grilling brings out  great flavor and it can be used for  sweet or savory. If you are making a salsa grill the peppers and onions as well.  Chop them all with the grilled pineapple.

Gale, I don't have an exact recipe for the mango salsa. I eyeball it.
                          Mango Salsa
2 or 3 large mangos, cut and diced
1 or 2 jalapenos, cut, seeds removed, and chopped in small pieces
red onion, cut and diced ( I use approx 1/4 to 1/2 cup)
fresh garlic, chopped in small pieces ( approx. 2-3)
1/2 red bell pepper, chopped and diced (small pepper)
1 whole lime, cut in half and squeezed over the salsa.
Mix all together, let marry a couple of hours, and serve with the fish.
Can add cilantro. This makes a very colorful salsa. Sometimes I have
to add more lime juice. Some people add salt to taste! If you like the
taste of the jalapenos but don't like the heat, cut more of the vein out.
Enjoy!!
Note: Hubby will take leftover salsa to work and loves it with Tostitos
Artisan Roasted Garlic and Black Bean Chips. Yummy!
