Gale, I don't have an exact recipe for the mango salsa. I eyeball it. Mango Salsa 2 or 3 large mangos, cut and diced 1 or 2 jalapenos, cut, seeds removed, and chopped in small pieces red onion, cut and diced ( I use approx 1/4 to 1/2 cup) fresh garlic, chopped in small pieces ( approx. 2-3) 1/2 red bell pepper, chopped and diced (small pepper) 1 whole lime, cut in half and squeezed over the salsa. Mix all together, let marry a couple of hours, and serve with the fish. Can add cilantro. This makes a very colorful salsa. Sometimes I have to add more lime juice. Some people add salt to taste! If you like the taste of the jalapenos but don't like the heat, cut more of the vein out. Enjoy!! Note: Hubby will take leftover salsa to work and loves it with Tostitos Artisan Roasted Garlic and Black Bean Chips. Yummy!
