the recipe for the icing is pretty simple...

2 lbs {1bag} confectioner’s sugar
1/3 c. plus one tablespoon meringue powder
about 3/4c. water

1-3 tbs of extract flavoring

beat until stiff, add more water for thinner icing

Thank you Lesley.... I don't have any meringue powder so I will look for it the next time i'm in a large store.
One more question - about the 1-3 tbs extrract flavoring ..... is that 1-3 teaspoons or 1-3 tablespoons? TIA

tablespoons...I like to use almond, but if I think someone with nut allergies might eat it, I go for vanilla.

Next Sunday night the "art" project for the kids will be decorating cookies. I'll make up a couple batches of plain cookies and we'll use lots of different commercial icings and decorations. I'm going to tie each kid in a big garbage bag for an apron.
