http://whatscookingamerica.net/squash.htm   This is a link to site on different types of squash and how to prepare them.I have saved this to my favorites last year and I thought I would share it with you again. One of my favorites is spagetti squash,I wash it and poke several places with a knife and cook on high in my microwave for about 15 minutes .It should be soft to the touch when done.Slice it open and scrape out the insides with a large spoon into a bowl I put salt and pepper to taste ,butter and sprinkle with Parmesan cheese.Enjoy ! This can be used in place of pasta with a good sauce on top, delicious!

I love butternut squash as well.  My favorite way to prepare it is to chunk it up and drizzle it with olive oil and a bit of salt and roast it in a hot oven turning once it a while.  When it is toasty brown in spots and soft it is done.
I did this for dinner the other night and the left over squash I used to make soup last night.  Pit some onion, celery and red pepper to soften in a pan, added some chicken broth and the squash.  A whir in the blender and I had a great soup.   OH, I forgot I added a Granny Smith apple to the pan as well.  Seasonings were salt, pepper, cinnamon and a bit of paprika.

Nikki,  Thanks!!  Your way of doing butternut squash is better than mine!!
This is better for my diet!! Before I started my diet I would have added
butter, dark brown sugar, and cinnamon to the squash!!  I'm going to try
both of these!!!

I do "confetti squash" which is diced yellow squash and zucchini and onion with a touch of butter, salt and pepper in the microwave.
