This is a new recipe for me and it was very good: Preheat oven to 375* and bake 20 mins.This will make 12 muffins.2 cups of flour,1/2 t. salt,1/4t. baking soda,1 cup of sugar,1 stick of softened butter,2 eggs,1 1/2 cup pitted sour cherries,if using canned cherries drain well.3/4 cup sour cream,1 t.almond extract, 1 t. vanilla,1 t.lemon rind or orange rind ( optional ) 1/2 cup chopped roasted almonds:.In a med.bowl mix together flour,baking soda and salt.In another bowl cream together butter and sugar until fluffy and light.In another bowl beat. together eggs,vanilla and almond extracts,mix in sour cream.fold wet ingredients all together and fold into dry ingredients Next fold in sour cherries,chopped roasted almonds, lemon or orange rind.Fill 12 greased,or lined muffin tins.Spinkle tops with a little sugar if desired.Bake in a preheated 375* oven for 20 mins.You can substitute apricots or plums instead of the cherries.

Gale, get out of my head! for some reason you come up with the combinations that just "sing" to me. Cherry and almond has got to be one of my "non-chocolate" all time favorites. (and Apricot and almond.)

This will be copied and will be made for breakfast.

Hi Nancy,I would use fresh or canned drain well just like the cherries, since the recipe calls for fresh or canned cherries.

TROPICAL MUFFINS

1/4 CUP BUTTER,SOFTENED
1/2 CUP SUGAR
1 EGG
1 CUP (8 OUNCES) SOUR CREAM
1-1/2 TSP. RUM EXTRACT
1-1/2 CUPS ALL-PURPOSE FLOUR
1 TSP. BAKING POWDER
1/2 TSP. BAKING SODA
1 CAN (8 OUNCES) CRUSHED PINEAPPLE, DRAINED
1/2 CUP FLAKED COCONUT
1/3 CUP CHOPPED PECANS

1. IN A MIXING BOWL, CREAM THE BUTTER AND SUGAR. ADD THE EGG, SOUR CREAM AND EXTRACT; MIX WELL. COMBINE THE FLOUR, BAKING POWDER, BAKING SODA AND SALT; STIR INTO THE CREAMED MIXTURE JUST UNTIL MOISTENED. FOLD IN THE PINEAPPLE, COCONUT AND PECAN.

2. FILL GREASED OR PAPER-LINED MUFFIN CUPS TWO-THIRDS FULL. BAKE AT 375* FOR 22-25 MINUTES OR UNTIL A TOOTHPICK COMES OUT CLEAN. COOL FOR 5 MINUTES REMOVING FROM PAN TO A WIRE RACK. YIELD ABOUT 1 DOZEN.

Susan, Thank you for the Tropical Muffin recipe. Looks like another great
recipe. I have printed it and will try soon. My hubby enjoyed the sour cream
coffee cake this past weekend and I did too. He had to have 2 pieces the first
morning because 1 wasan't enough. lol lol
