In Response to SOUR CHERRY AND ALMOND MUFFINS: share your favorite muffins if you care to.:
This is a new recipe for me and it was very good: Preheat oven to 375* and bake 20 mins.This will make 12 muffins.2 cups of flour,1/2 t. salt,1/4t. baking soda,1 cup of sugar,1 stick of softened butter,2 eggs,1 1/2 cup pitted sour cherries,if using canned cherries drain well.3/4 cup sour cream,1 t.almond extract, 1 t. vanilla,1 t.lemon rind or orange rind ( optional ) 1/2 cup chopped roasted almonds : .In a med.bowl mix together flour,baking soda and salt.In another bowl cream together butter and sugar until fluffy and light.In another bowl beat. together eggs,vanilla and almond extracts,mix in sour cream.fold wet ingredients all together and fold into dry ingredients Next fold in sour cherries,chopped roasted almonds, lemon or orange rind.Fill 12 greased,or lined muffin tins.Spinkle tops with a little sugar if desired.Bake in a preheated 375* oven for 20 mins.You can substitute apricots or plums instead of the cherries.
