Irma -- about semi-soft peanut brittle ...  Did you boil it long enough ---- did it reach the correct temp?
I have an almost magic recipe for microwave peanut brittle .... I've been using that since 1981.  1981!!!

For my snack lunch I just gobbled a batch of guacamole .... ohhhhhhhhhh, what a treat.  I

Oh Nancy, the guacomole is a favorite of my sons and mine but Dad won't eat it.I forget because I'm always on husband mode.Now I have to get some avocados.If you are low carb dieting guacomole and pork rinds are a good choice.

hee hee -- Gale, if you are SERIOUS about guacamole on a low carb diet you can do great if you just use your fingers!!

I'm always looking for low calorie filling snacks.  Here is one of my favorites  Serves1
BLENDER CAPPUCCINO
In a blender process 1/2 cup double strength coffee (chilled), 1/4 cup nonfat milk, 4 ice cubes, 1-2 packets calorie free sweetener, 1/8 tsp vanilla extract, and a pinch of cinnamon.  Blend untill pureed and frothy.  Serve at once.  Serve with 1 stalk of celery filled with 1 Tablespoon of peanut butter.

Here is something else I make for a snack....can also be lunch!
CHICKEN WRAP
On one whole wheat tortilla, place about 1 tablespoon fat free Caesar Salad dressing ( I use Cardini's)  Top with sliced or cubed pre-cooked chicken ( Tyson has it packaged in several flavors or use leftovers).  Then add a sprinkling of your favorite cheese(ie Parmesan, Monterrey Jack, or Pepper Jack are some choices).  top with chopped tomato, canned green chilies, or use your imagination.  Fold. or roll tortilla and place in microwave for about 30 seconds or less (depends on your microwave).  It should just melt the cheese, but not make the tortilla tough.  You can then tuck in some shredded lettuce, if you like and serve. I use the medium size soft taco)

In case you're looking for the Original Chex Party Mix Recipe, thought I would share it: Original Chex® Party Mix 3 cups Corn Chex® cereal 3 cups Rice Chex® cereal 3 cups Wheat Chex® cereal 1 cup mixed nuts 1 cup bite-size pretzels 1 cup garlic-flavor bite-size bagel chips or regular-size bagel chips, broken into 1-inch pieces 6 tablespoons butter or margarine 2 tablespoons Worcestershire sauce 1 1/2 teaspoons seasoned salt 3/4 teaspoon garlic powder 1/2 teaspoon onion powder In large microwavable bowl, mix cereals, nuts, pretzels and bagel chips; set aside. In small microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated. Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool. Store in airtight container. Makes 24 servings (1/2 cup each) Kathy H

I would be happy to share my recipe...so here it is!

SEASONED PRETZELS

1 1/4 LBS HARD BROKEN PRETZELS
1 CUP VEG. OIL
1/2 TSP. GARLIC POWDER
1/2 TSP. DILL
1/2 TSP. LEMON PEPPER
1 PKG. RANCH ORIG. SALAD DRESSING

MIX AND POUR OVER PRETZELS, STIRRING TO COAT THE PRETZELS.  BAKE FOR 16-18 MINUTES AT 350*, STIRRING ONCE DURING TIME.  REMOVE FROM PAN AND PUT IN TIGHTLY COVERED CONTAINER.  PUT ALL SCRAPINGS FROM PAN IN CONTAINER W/PRETZELS.

These pretzels are addictive, you can't eat just one!  Wink

I would love to see your recipe.  My grandkids are here every day after school and something new and good would be a treat for them.

I cut a sliver of the cake(it was about 1/4 inch thick) to taste it & to get it started for him & he did eat the rest of the cake all by himself. He would slice a sliver several times a day & a nice piece for his dessert.

One of the stores I shop at has an in-store bakery & sell flavored bundt cakes with a glaze for $7.99, I had tasted the pineapple one & decided to see if I could come close to the taste. The one I made was not as sweet & I used the cho. glaze instead of their pineapple glaze & I liked my version better. I do not buy the pineapple in heavy syrup, so that might be the reason it was not too sweet.  It was cheaper to buy the glaze with the $1.00 off AND I should have enough for at least  5 more cakes. I try my best to save $ & always look for the bargains Money mouth.
