Nikki - As today is your scheduled day of surgery I am sure many of us on the VBB forums have you in our thoughts and prayers.  I hope that you will be surprised by some friends to assist you in your recovery and maybe getting your husband to his Adult Day Care.

In Response to Re: SHARE what's in your oven : At last, when I changed doctors this one took my "complaint" of a sore foot seriously and sent me to a podiatrist.  One look at the x-rays he said that I have a bunion and what is causing so much pain is a bone spur that has broken off and is being wedged between the joints when I walk. He will not know until he "gets in there" if he will have to replace the joint. Best case non weight bearing for about 4 weeks, worse case non weight bearing for 8 weeks. I am going to go crazy..... My husband will not understand why I can not drive.  He will not understand why I can't do most of the things that I have to do. The fact that I can not get him to Adult Day Care means I will be locked in the house with him for a month...like I said I am going to go crazy...

So Sorry to hear about your upcoming surgery.I worked for a Podiatrist for a few years.Yes anything wrong with your feet and it is miserable.You will have relief after all is said and done.Your poor hubby will be very confused.Maybe your grandson can come and be with you after school and winter break will be here soon also.I pray for a speedy recovery for you!

Today I have two loaves of Amish white bread baking and when they come out.in go two apple pies one for our dessert and one to send to my neighbor,she needs a little cheering up her hubby was just diagnosed with cancer.

My neighbor and I both enjoy baking and we share our goodies.  We both tend to bake different goodies from one another which adds interest to the mix.  We've exchanged numerous recipes between us.  If I run out of a baking need or she does, we save one another trips to the store for a forgotten ingredient.

Our normal drill is that if one of we couples are away on a trip, the other couple has dinner ready for them when they get back into town.  

This couple will be leaving to head back to NY for Christmas.  Since my family will be here at that time and I probably won't be able to prepare a meal for my neighbors, I'm going to prepare one for the night before they leave to go to NY.  That gives her a chance to clean out the refrigerator before they go.  It works for us!!

Nikki, thinking of you as you go through this difficult time.  Like Cheri, I'm hoping that a neighbor or friend steps forward to help you out, particularly in getting your husband to day care.  I've had bunionectomies on both feet - not a stroll in the park!!

Today is this year's last day of church school.  They will all work hard together then have lunch the teachers are making.  I'm taking a little metal bucket of commercial candy for each kid and lots and lots of cookies.   And I'll take all the left-over home made candy I have piled here.

I'm sharing homemade French bread along with Spaghetti and salad.Taking some to my brother just because! Oh and I made pizzelles to go with coffee after dinner.

Cry   I just got home from the Christmas party and lunch at church school .......... the one where I was supposed to take cookies.Embarassed
I drove into the garage and - yikes - the big container of cookies was setting on the table at the end of the garage.
Oh, we had enough food and treats that they weren't even missed byt I feel just awfulFrown

I just made a Cranberry and nut filled Eggnog Cake.  Another I found on King Arthur Flour site.  I did a bit of a change the recipe is actually called Cherry and Nut Filled Eggnog Cake but I used dried cranberries.
It smells heavenly. 
If you are so inclined......
Cherry and Nut-Filled Eggnog Cake
Filling
1/2 cup dried sweet cherries
1 Tb rum or brandy (or 2 tsp vanilla)
1/2 cup chopped pecans or walnuts...I used pecans
1/4 Cup light or dark brown sugar
1/4 Cup flour
2 Tb butter, melted
Cake
1 1/2 Cup...3 Sticks...12 ounces butter..(.no matter how ya write it it is a lot of butter)
2 Cups sugar
1/2 tsp grated nutmeg
1 tsp salt
4 large eggs
1/4 Cup rum or brandy (optional...I just added another 1/4 cup eggnog)
3 1/2 cups flour
2 tsp baking powder
1 1/4 Cup eggnog or light cream
Glaze
1 Cup confectioners sugar
2 tsp eggnog, (or milk, cream or water)
1 tsp rum or brandy
1/4 tsp nutmeg
Filling:
Mix the dried cherries with the rum or vanilla, add the remaining ingredients, stir well and set aside.  Stir occasionally so the cherries absorb the liquid.

Cake:
Pre heat the oven to 325 degrees F.
Lightly grease a 10 inch tube pan or a bundt pan.

In a large bowl of mixer, beat together butter, sugar, nutmeg and salt until light and fluffy.
Add the eggs one at a time beating well between each addition until the batter looks fluffy.  Beat in rum or brandy if you are using it.
Whisk the flour and baking powder together.  Beat in 1/3 of the flour mixture, then 1/3 of the eggnog or cream.  Repeat being sure to scrape the bottom and sides of the bowl.  Add the remaining flour and eggnog beating well.
Spoon 1/2 the batter in the pan.
Sprinkle with nut mixture.
Top with the remaining batter.
Rap the pan on the counter to release any bubbles.
Bake 1 hour and 15 minutes.
cool 20 minutes.


I also just made a batch of Almond/amaretto truffles. 
This is going to be a difficult weekend....may not be any for Christmas.

I just put a 20 pound turkey in my top oven.  The bottom oven will soon have a 10 pound ham in it.  Tonight is our extended family get together.  There will be 25 of us this year.  Some of the great nieces and nephews are to the age where they want to bring a girlfriend or boyfriend.

My daughter, daughter-in-law, two nieces, and sister-in-law will bring the rest of the meal.  One of my great nieces is a vegetarian, and another great niece is a vegan.  Thankfully one of my nieces is bringing a Vegetable extravaganza (her words) to take care of the "vegie" people.

Trust me you and everyone else have helped me quite a bit. 
Believe it or not I use all of you to help me keep my sanity.
(Don't tell anyone but I just had to get to the store this morning so we got into the car and I made my way into town....all of 4 miles away.)
It will be great when I can get my husband back to Day Care and resume a more normal routine.
As much as he says he does not like day care I think he misses it and the routine of going there.  Will resume the first of the year.

Well today in my oven there will be pumpkin roll this will be for Christmas dessert  "Maybe""  then on to my blueberry cheesecake. I just love baking it is how I destress.

LOL LOL -- yesterday I went to the Christmas open house of the youth minister.   I took two batches of peanut brittle to his wife.  Then another wonderful couple I love so much saw the candy and acted  very hurt and sad because they didn't get any.
So last night I made SIX batches, each in a zip lock bag, then all stuffed into a big paper bag.  Tonight I will present the whole big bag to them.
I know they will give most of it away.

My neighbors across the road shared what was in their oven.  They had made a big pan of  bread pudding with lemon sauce to take to a family gathering  in St. Louis.  Since there was tons of food, there was quite a bit of the puddng left.  Last night there was a knock on the door and the Mr. presented us with a container of the pudding.  It is delicious.
I had given them one of my raisin and cherry stollen loaves.  Earlier they had given us a tray of cookies and fudge.  Nice neighbors.

Nikki  I printed your eggnog cake recipe and will make it next week when my pies are all gone.  It looks really good.  I'll use cranberries also, as that's what I have
