Sauerkraut salad

I have been making my own sauerkraut,mainly for the probiotics and health benefits.Cooking the sauerkraut kills off the probotic properties .I have been looking for recipes to use this uncooked and I found this sauerkraut recipe:  SAUERKRAUT SALAD: 1 large can or jar of sauerkraut do not drain,one cup of each of the following,chopped onion ,chopped celery,chopped green bell pepper.1 1/2 cup sugar I use Splenda, 1/2 cup oil.Mix in nonmetal bowl and refrigerate overnight ,drain off liquid and serve.

I didn't realize cooking it would do away with so many of the benefits.

Sounds like a good cold salad recipe I must try as we both like sauerkraut.

Gale -- I love sauerkraut hot and stirred into mashed potatoes.   I can't imagine it cold but that recipe is sure worth a try.  Thank you.

Never heard of Sauerkraut salad.  Only use Sauerkraut with pork and potatoes.  This is an old Pennsylvania Dutch tradition.  I make this even though I am not Pennsylvania Dutch.

I often serve sauerkraut with grilled pork chops, when I don't have applesauce. But I have been heating it, so I will have to serve it cold and see what the comments are.

The reason I found this recipe is a way that I can eat it so it doesn't have to be cooked.I make my own sauerkraut from scratch,so it has probiotic's in it.I doubt that store bought has the probiotic properties.Mine is made in a very large glass container and it ferments naturally.The only ingredients are cabbage that is shredded and kosher salt.this is left to ferment over a week or longer,it's up to you how sour you want it.It can be refrigerated  after it's done for about a month.I  would be happy to answer any questions you may have on how to make your own homemade sauerkraut.When I do cook it I always peel and slice a couple of apples and put the in the sauerkraut to sweeten it and it goes great with any pork roast.

Thanks Gale.  I never thought about making my own sauerkraut.  May have to try it so I can control the amount of salt that goes into it.  Having cut back on salt over the years I've found anything really salty makes me cough a lot(weird I know lol).

I have made this for years, but not with homemade sauerkraut.  It is really close to coleslaw when done and people who do not like sauerkraut love this salad.  Rather than Splenda try Stevia in the Raw or some other natural sugar free sweetner.

Oh Carol ,you don't have to be sorry.Not everyone does like every food they have tried.Believe me there have been a few I don't care for,anything too sweet is one.

Gale, Thank you!! There is a lot of food that I don't like either! I really loved the Italian love cake
because it wasan't so sweet. Hubby wants me to make it again for Father's Day.

Gale, Saturday I made hubby Reubens & had a lot of sauerkraut left & was wondering if I could find a sauerkraut salad online like the one I tried at a salad bar on the drive to Florida. I will try yours first, thanks for posting.

Hi Carol ,I'm so pleased that you liked the cake.I love rich creamy deserts the best.I found a recipe for a chocolate cake using sauerkraut,maybe if I'm feeling brave one day I'll make one !Smile

I LOVE SAUERKRAUT...Yum!!!  I am going to try it. 

You are such a good and knowledgeable cook, any ideas as to dishes that are high in Potassium and Vit. D?  My blood work is showing a deficiency in this and I am being medicated for it.  I had no idea that when you have a deficiency like this how greatly it effects your body.

Oil, do you use EVOO, Olive oil or Veg.?
