When you make rolled and cut cookies do you use a floured board or a pastry cloth?  I used a floured board and a rolling pin with a "stocking" on it.  Cookies did fine with no sticking and n

I have success rolling out cookies between 2 sheets of parchment paper.

We roll out cookies between 2 sheets of parchment paper. No additional flour is needed and the cookies turn out fine and delicious.

Nikki P, I sometimes have a problem with the spritz cookies not wanting to separate from the "spritzer".  I haven't made those in years.

I find that happens and quite a few get scraped back into the bowl to be "re-spritzed" (if that is a real word.)
Keeping them at the right temperature sometimes helps but I think it is a rythym you get into and you get the pressure and timing right and they just seem to work.  When I make them with my Grandson we will do some of the shapes just so he can see what shape cookie the funny looking dies make.  Then we switch to the ribbon type one and we dip them in chocolate when they are cooled.
It is a fun cookie to do but can't bring myself to do it but once a year. Just not into the fuss.

The last time it was done at my house, hubby and I made it a joint effort.   Some cookies were a bit misshapen, but they all taste good

Ha Ha Ha...rolled! Cut out! I do drop cookies much easier.  This is from a woman that makes Bar cookies or Bundt Cakes just because they are easier. Ok, I will fess up, I have done a Star Tree with my Grandson and I have done Spritz cookies with him.  I would do a Spritz over a rolled or cut out cookie though. Don't get me started on decorating the cookies!! A Chocolate chip placed delicately in the center of a Chocolate Chip Cookie would be classified as decorated in my book.

I have to agree with Nikki,I love cookies but hate to make them but when I do I use my board and french rolling pin both floured.I also like bar cookies.Whenever I spend a lot of time with meal preparation I always turn to the old 9x13 baking dish to finish our meal with some sort of dessert.
