I love red velvet cake but the amount of red dye used is a lot and red food coloring is not good for you.It is linked to hyperactivity in children and a host of other problems.I think I'll just leave the red out and call it velvet cake.From what I have read beet juice can be substituted for the red food coloring.I would have to do more research on the subject to find out how much.

I use LorAnn Red Velvet Emulsion when I make red velvet stuff instead of red food coloring. It works great. The color is really good (and you use less than with food coloring) and it doesn't have a funny flavor.
