I just pulled a dozen Red Velvet cupcakes out of my oven! Made from scratch these are the best I've ever made! Easy and quick, with homemade cream cheese frosting they will be a hit whether you serve them at home or take to share with friends!

Red Velvet Cupcake Recipe
1 cup plus 2 Tablespoons flour
2 Tablespoons cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
1/4 cup butter, softened
2 eggs
1 Tablespoon red food coloring
2 teaspoons vanilla
2/3 cup buttermilk ( I substitute regular milk with teaspoon of vinegar mixed in)
Heat oven 350. Line muffin pan with paper liners. In medium bow; mix lour, cocoa, baking soda and salt.
In large bowl beat sugar and butter at medium speed until light and creamy.. Add eggs one at a time beating well after each. Beat in food coloring and vanilla. Beat in flour mixture in three parts alternating with milk, just until blended, beginning and ending with flour. Spoon into muffin cups.Bake 25 minutes or until toothpick comes out clean. Cool
FROSTING
6 0z. cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla
3 to 31/4 cups powdered sugar
Beat cream cheese and butter add vanilla, at low speed beat in 3 cups of powdered sugar adding additional sugar if needed for spreading consistency. Frost cupcakes, garnish with sprinkles if desired. Makes 12

Cathy, have you tried the cooked frosting for red velvet? I like it better than the cream cheese. It is the one where you cream butter and sugar for a long time, add the flour/milk that you have cooked and cooled. The frosting has a wonderful melt in your mouth texture.

Hey Judy -- I've never tried a cooked frosting. The cream cheese/butter frosting is a new one for me that I'm so proud of trying and using.
Please print your cooked recipe. I have quite ripe bananas setting on my counter. What fun to have a new recipe for their cake

This is one of the BEST fluffy frostings ever.
I used this frosting for my Whoopie Pies.
This is the one I use.
Fluffy Frosting
1 Cup Milk
1/4 Cup flour
1 Cup butter or shortening
1 cup powdered sugar
1 Tb vanilla
In a sauce pan combine milk and flour. Stir until smooth. Cook until very thick sturring constantly.
Remove from heat and place in a small bowl and cover with plastic wrap. Make sure you place the plastic directly on the mixture to avoid a skin forming. Cool completely.
In a large mixer bowl beat butter or shortening until light and fluffy. About 5 minutes. Do not cut the time on this. Add sugar and continue to beat.
Add the cooled flour mixture 1 spoon full at a time beat well between additions. Add vanilla.

If you want chocolate frosting I add about 8 ounces of chopped chocolate to the flour mixture when I take it off the heat and stir that in until chocolate has melted. cocoa could also be added to the sugar and mixed in then. Peanut Butter frosting could be made by adding peanut butter with the butter or shortening.

One cup milk ..... I keep only 1% milk. Is that OK?
For chocolate frosting add 8 oz chopped chocolate ...... can I use 1 cup chocolate chips?

I love red velvet cake but the amount of red dye used is a lot and red food coloring is not good for you.It is linked to hyperactivity in children and a host of other problems.I think I'll just leave the red out and call it velvet cake.From what I have read beet juice can be substituted for the red food coloring.I would have to do more research on the subject to find out how much.
