I wouldn't post so many recipes - it's too much work but I sure appreciate yours.

Nancy...

I will post recipes here and there but not like I was, I must have posted at least 45 - 50 recipes this past month.  I know I was typing about three a day between the three discussion forums.  Don't worry, I just found 2 more cookie recipes that I think you will like!

Almond Joy Cake

I may have posted this sometime during the last few years that I've been on this site, but just in case, here it is.

1 box chocolate cake mix
3/4 Cup milk
24 large marshmallows
1 8 oz can coconut - I use the bagged coconut
1 Cup slivered almonds

Mix cake according to directions.  Put into a 9 x 13" or 10 x 15" pan.

Heat milk; add marshmallows and stir until melted.  Add coconut.  Spread mix on the cake batter and sprinkle with almonds.  Bake at 350 degrees for 35-40 minutes or until cake is done.  Frost with chocolate frosting.

Chocolate Frosting

1 Cup sugar
1/2 Cup butter
1/4 Cup water
16 large marshmallows
1/2 Cup chocolate chips

Bring sugar, butter and water to a boil.  Remove from heat, stir in marshmallows and choc chips, stirring until the chips and marshmallows are melted.  Cool.

Stir this occasionally as it is cooling, until it is of spreading consistency.  Spread this over the cake, being careful not to disturb the coconut filling.

Chocolate Peanut Butter Cake

1 box chocolate cake mix
1 cup creamy peanut butter
1 Tbs oil
1 can chocolate frosting (experiment to see what kind of frosting you prefer)

Make cake per directions.  Remove from oven and cool slightly.

While cake is warm, spread with peanut butter to which you've added 1 Tbs oil.  Cool totally and refrigerate so that the peanut butter is well chilled.

Microwave the canned frosting for a brief time to make it spreadable and apply over the peanut butter mix.

Pumpkin Pie Cake

1 box yellow cake mix
3/4 cup butter or margarine, softened
4 eggs
1 28 oz pumpkin
2/3 cup milk
1/2 cup brown sugar
3/4 cup white sugar
2 tsp cinnamon
1/2 cup nuts

Preheat oven to 350 degrees.  Remove one cup of cake mix from the box and set aside.

Combine remaining mix with 1/2 cup of butter or margarine and one egg.  Mix well and pat into bottom of a greased 9 x 13" pan.

Mix pumpkin, milk, brown sugar and the remaining eggs, 1/4 cug sugar and cinnamon. Spread over the cake mixture.

Mix the one cup of reserved cake mix with the remaining sugar and margarine or butter and nuts.  Combine until crumbly, then sprinke over top of pumpkini mixture.

Bake for one hour or until a toothpick inserted in the center comes out clean.
