This one is so unbelievably easy and so good. This is one you will be tempted to hold off making until the fall but try it now. The few times I have made this I have had people guess what type of pie it is and I always get Cherry. No one has ever guessed the true ingredient. Cranberry Streusel Pie 1 pound of fresh cranberries. They can be frozen ones as well. 3/4 Cup white sugar 1/4 Cup flour 1/2 Cup packed brown sugar 1/2 Cup walnuts 1/4 Cup flour 1 tsp shortening or butter 1 9 inch pie crust, home made or the prepared type. Pre heat oven to 350 degrees F. Smash berries. Stir in white sugar and 1/4 cup flour. Pour berries into pie crust. Chop walnuts into pieces. With a pastry blender or fork stir in brown sugar, remaining flour and shortening. Mixture should be crumbly. Sprinkle over top of pie. Bake for 45 minutes. You may have to cover edge of crust with foil if it starts to get over browned. I have also made this using brown sugar in both the filling as well as the streusel topping very good results as I think the brown sugar has a bit more flavor I did cut back on it a bit It was more loose pack rather than a firm pack on the measurement. All I can say is don't wait until fall to make this.

Nikki I just happen to have some cranberries in my freezer. I always stock up when they are in season.
