Ooey Gooey Squares

                 Ooey Gooey Squares

1 Butter Cake Mix (Duncan Hines)
1 stick oleo or butter
1 C pecan pieces
1 Egg
1 Cream Cheese (8 oz)
2 Eggs
1# Powdered sugar

Mix cake mix, oleo, 1 egg & nuts & pat into a 9 by 13 pan, cream the 2 eggs, powdered sugar & cream cheese & pour over crust. Bake at 350 for about 45 min.

That is the worst thing about Summer  - it is so hot to be cooking.  We have so many new things here to try, I can't wait for Fall.  Frown

Found this one looking for the candy recipe I posted..
Another "healthy" one??
Oat Bars
Pre heat oven to 350.  Line a 13X9 pan with parchment or foil, or just grease pan.
4 Cups oats, does not seem to matter if they are quick or old fashioned
1 Cup butter
1 1/2 Cup brown sugar
2 Cups chocolate chips
1 Cup peanut butter, I prefer smooth
Mix brown sugar and butter, stir in oatmeal.
Press into pan.
Bake for 10-20 minutes.  Remove from oven and cool on wire rack.
While bars are baking prepare topping.
In bowl place chocolate chips and peanut butter.Melt and stir until smooth.
(I usually melt in top of double boiler while bars are cooking but this can be done in that new fangled microwave)
Pour chocolate mixture over cooled bars, spread evenly.

Apple Squares/bars

2 tsp baking powder
1/4 cup milk
1/2 tsp van extract

Sift dry ingredients, blend in shortening.  Add milk, vanilla and egg.  Mix well.

Roll out ontoo large greased cookie sheet with sides (jelly roll pan works well).  Fill with aple mixture -- as for apple pie or with canned apple pie filling.

Cover with a layer of the dough.

Brush with egg yolk.  Sprinkle nuts on top or frost with a glaze made of conf sugar, butter and water or whatever combination you chose to use for a glaze.  Sprinkle with nutsl.  Cut into squares.

350 degrees 45-60 minutes until lightly browned.

Chocolate Covered Cherry Cookies

1 1/2 cup flour
1/2 cup unsweetened cocoa powder
1/2 tsp salt
1/2 tsp baking soda
1/2 cup butter, softened
3/4 cup sugar
1 egg
1 1/2 tsp vanilla extract
20 oz jar maraschino cherries
6 oz choc chips
1/2 cup sweetened condensed milk

In large bowl, sift flour, cocoa, salt, paking powder and baking soda.

In mixer bowl, beat butter & sugar on low speed til fluffy. Add egg and vanilla and beat well.  Gradually add dry ingredients to creamed mixture and beat until well blended.

Shape dough into 1" dough balls, place on ungreased cookie sheet.  Press down the center of the ball with thumb. 

Drain cherries, reserving juice.  Place a cherry in the center of each dough ball.

In small saucepan, combine choc pieces, sweetened condense milk.  Heat until choc is melted.  Stir in 4 tsp cerry juice.  Spoon 1 tsp of choc mixture over each cherry, covering well.

Bake at 350 degrees for 10-12 mins.  Makes about 3 doz cookies.

Fran, I make this and add chocolate chips and coconut to the cream cheese mixture. Very tasty.

I am glad to hear that nothing is wrong...was worried and upset!!  I think there is a problem with PM, 3 times I was typing my message and then all of a sudden, it dissappeared!  What is up with that!  I got one message from you and that was about 4:00 p.m. today.

It's passed bed time!!  But I made my usual caramel chocolate cookies, new King Arthur's chocolate peanut butter cookies and  Bakery's chocolate covered cherry cookies .......... well, I made the dough - I'll bake them in the morning.

OK, I'm gonna get healthy on y'all . Whole-Wheat Fig Bars 4 ounces dried figs, about 3/4 Cup 1/2 cup flour 1/2 Cup whole wheat flour 1/3 Cup packed dark brown sugar 1 tsp cinnamon 1/2 tsp ginger 1/2 tsp baking powder 1/4 tsp salt 1/3 Cup molasses 2 Tb butter, melted 1 tsp vanilla 1 large egg while Pre heat oven to 350 degrees F. Line 8 inch square pan with foil or parchment. Grease foil or parchment With kitchen shears cut stems from figs; cut figs into small pieces. In large bowl, with spoon, stir figs, flours, brown sugar, cinnamon, ginger, baking powder, and salt just until mixed.  Stir in molasses, butter, vanilla, and egg white just until blended and evenly moistened.  With metal spatula, spread batter evenly in pan. (batter will be sticky) Bake until toothpick inserted in center comes out clean, about 20 to 25 minutes.  cool completely on wire rack in pan. When cool lift foil out of pan and peel off, cut into bars. Makes 12 bars. (about 130 cal each.) Breakfast Granola Bars 2 Cups old fashioned oats, uncooked 1 Cup flour 3/4 Cup brown sugar 3/4 Cup dark seedless raisins 1/2 Cup toasted wheat germ 3/4 tsp salt 3/4 tsp ground cinnamon 1/2 Cup vegetable oil 1/2 Cup honey 1 large egg 2 tsp vanilla extract Pre heat oven to 350 line 13X9 pan with foil or parchment, grease foil In large bowl, with spoon mix oats, flour, brown sugar, raisins, wheat germ, cinnamon until combined.  Add oil, honey, egg and vanilla; stir until blended.  With wit hand pat into prepared pan. Bake until pale golden around edges, 30 to 35 minutes.  Cool completely in pan on wire rack. When cool lift from pan, peel away foil or parchment.  Cut lengthwise into 4 strips, then cut each strip crosswise into 6 pieces.  Makes 24 bars. 185 calories each, 4g Protein, 30g carbohydrates, 6 g total fat (1g sat fat) 1.4 gr fiber, 9mg cholesterol, 75mg Sodium. Healthy eating....

Do you think I can use frozen figs?  I've got some from a friend's fig tree, cut in half and frozen.  My hubby loves anything with figs, and this sounds great!

I thought I would post this yummy cookie recipe for you all! 

 

COCONUT PECAN COOKIES

1 EGG LIGHTLY BEATEN
1 CAN (5 OUNCES) EVAPORATED MILK
2/3 CUP SUGAR
1/4 CUP BUTTER, CUBED
1-1/4 CUPS FLAKED COCONUT
1/2 CUP CHOPPED PECANS

COOKIE DOUGH:

1 CUP BUTTER, SOFTENED
3/4 CUP SUGAR
3/4 CUP PACKED BROWN SUGAR
2 EGGS
1 TSP. VANILLA
2-1/4 CUPS ALL-PURPOSE FLOUR
1 TSP. BAKING SODA
1 TSP. SALT
4 CUPS (24 OUNCES) SEMISWEET CHOC. CHIPS, DIVIDED
1/4 CUP FLAKED COCONUT

1.  FOR FROSTING, IN A LARGE SAUCE PAN, COMBINE THE EGG, MILK, SUGAR AND BUTTER.  COOK AND STIR OVER MEDIUM-LOW HEAT FOR 10-12 MINUTES OR UNTIL SLIGHTLY THICKENED AND MIXTURE REACHES 160* OR IS THICK ENOUGH TO COAT THE BACK OF A METAL SPOON.  STIR IN COCONUT AND PECANS.  SET ASIDE.

2.  IN A LARGE BOWL, CREAM BUTTER AND SUGARS UNTIL LIGHT AND FLUFFY.  ADD EGGS, ONE AT A TIME, BEATING WELL AFTER EACH ADDITION.  BEAT IN VANILLA.  COMBINE THE FLOUR, BAKING SODA AND SALT; GRADUALLY ADD TO CREAMED MIXTURE AND MIX WELL.  STIR IN 2 CUPS CHIPS AND COCONUT.

3.  DROP BY TABLESPOONS 2 IN. APART ONTO UNGREASED BAKING SHEETS.  BAKE AT 350 FOR 8-10 MINUTES OR UNTIL LIGHTLY BROWNED.  COOL FOR 10 MINUTES BEFORE REMOVING TO WIRE RACK TO COOL COMPLETELY.

4.  IN A MICROWAVE, MELT THE REMAINING CHOC. CHIPS; STIR UNTIL SMOOTH.  FROST COOLED COOKIES; DRIZZLE WITH MELTED CHOC.  YIELD:  6-1/2 DOZEN

Fran, Nikki, Bakery1, and Susan,   Thank you very much for more great
recipes.  Somehow, I got behind on printing these. I have printed them
and they are on my to try pile which is growing by the minute. I always
try to say thank you when I print them, so I don't forget the thank yous!!
So if I don't say thank you, I have had a senior moment!!  lol lol lol

My Navy son and his squadron deployed 2 weeks ago, so I send "care packages" every 2 weeks. I just shipped a batch of these: 7-LAYER BARS 1/2 c. butter 1 1/2 c. graham cracker crumbs 1 c. (6 oz. pkg.) butterscotch chips 1 c. (6 oz. pkg.) semi-sweet chocolate chips 1 c. (6 oz. pkg.) white chocolate chips 1 1/3 c. flaked coconut 1 c. pecans; chopped 1 14 oz. can sweetened condensed milk Preheat oven to 350 (325 for glass dish). In 13 x 9 in. pan, melt butter in oven. Sprinkle crumbs over butter, distributing evenly. Top with remaining ingredients (except milk) in order listed; press down firmly. Pour sweetened condensed milk evenly over the top of all layers. Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars and store covered at room temperature or in refrigerator. Yield: 24-36 bars

Verlee, I love these bars because you can do so many different things with the recipe.
Do you remember when Nestle had the choc. and raspberry chips and the caramel and
choc.? The choc. and raspberry looked so cool for Christmas. I sometimes use short-
bread instead of graham crackers. Your son and his friends are going to love these.
