Applesauce Cookies

                            Applesauce Cookies

1/2 C shortening
1 C sugar
1 C unsweetened applesauce 
1 tsp baking soda
2 C flour
1/2 tsp salt
3/4 C chopped nuts
3/4 C chopped raisins
1 tsp gr. cloves
1 tsp gr. cinnamon

Cream shortening & sugar, add the applesauce & blend well. Sift flour set aside, mix baking soda, salt & spices into flour & resift. Add the sifted items to the creamed shortening & stir till smooth. Stir in  the raisins & nuts & drop on a greased sheet about 2 inches apart. Bake at 375 about 12 min  . Makes about 4 doz.

CHOCOLATE CHIP CHEESECAKE BARS

3/4 CUP SHORTENING
3/4 CUP SUGAR
1/3 CUP PACKED BROWN SUGAR
1 EGG
1-1/2 TSP. VANILLA
1-1/2 CUPS ALL-PURPOSE FLOUR
1 TSP. SALT
3/4 TSP. BAKING SODA
1-1/2 CUPS MINIATURE CHOC. CHIPS
3/4 CUP CHOPPED PECANS

FILLING:

2 PKG. (8 OUNCES EACH) CREAM CHEESE, SOFTENED
3/4 CUP SUGAR
2 EGGS
1 TSP. VANILLA

1.  IN A MIXING BOWL, CREAM SHORTENING AND SUGARS.  BEAT IN EGG AND VANILLA.  COMBINE THE FLOUR, SALT AND BAKING SODA; ADD TO THE CREAMED MIXTURE AND MIX WELL.  FOLD IN THE CHOC. CHIPS AND PECANS.  SET ASIDE A THIRD OF THE DOUGH FOR TOPPING.  PRESS REMAINING DOUGH INTO A GREASED 13-IN. X 9-IN. X 2-IN. BAKING PAN.  BAKE AT 350* FOR 8 MINUTES.

2.  MEANWHILE, IN A SMALL MIXING BOWL, BEAT CREAM CHEESE AND SUGAR UNTIL SMOOTH.  ADD EGGS AND VANILLA; MIX WELL.  SPOON OVER CRUST.  DROP TEASPOONS OF THE RESERVED DOUGH OVER FILLING.

3.  BAKE AT 350* FOR 35-40 MINUTES OR UNTIL GOLDEN BROWN.  COOL ON A WIRE RACK.  COVER AND STORE IN THE REFRIGERATOR.  YIELD: 3 DOZEN

I saw this one this morning and I figured I would share it.
Even though the recipe calls for strawberry jam I bet it would be great with raspberry or one of the berry blend jams.

Triple Chocolate Strawberry Cookie Bars
1 box,12 ounces vanilla wafers, finely crushed, about 2 3/4 Cups
3/4 Cup finely chopped slivered almonds
1 Cup butter, melted
1 Can (14 ounces) Sweetened Condensed milk
1 Cup milk chocolate chocolate chips
1 Tb butter
1 (12 ounce) jar seedless strawberry jam
6 ounces white chocolate, squares or about 1/2 Cup chips
5 ounces semi sweet chocolate.
3/4 Cup heavy cream
Directions:
Heat oven to 350 degrees F.
Grease a 13X9 pan or line with parchment paper
Combine cookie crumbs, almonds and melted butter in a bowl, mix well.  Press firmly into bottom of prepared pan.
Bake 15 minutes. Cool
Combine 2/3 Cup sweetened condensed milk, milk chocolate chips and 1 Tb butter in microwave safe bowl.  Microwave on medium 1 minute or until chips melt.  Stir until smooth.  Spread evenly over crust.  chill 15 minutes.
Spread jam evenly over chocolate layer.  Chill 15 minutes.
combine remaining sweetened condensed milk and white chocolate in a microwave safe bowl.  Microwave on medium for 1 to 2 minutes or until chocolate melts.  Stir until smooth.  Spread over jam.  Chill 30 minutes.
Melt semi sweet chocolate chips with whipping cream in a sauce pan over low heat.  Stir until thickened and smooth.  Spread evenly over white chocolate.  chill 1 to 2 hours before cutting.

Note. I am not a fan of the milk chocolate so when I make these I will use semi sweet, white chocolate and the dark chocolate.  I think there will be enough contrast and the jam will make it sweet enough that the semi sweet and dark will be perfect. But that's just me....

BUTTERSCOTCH CASHEW BARS

1 CUP PLUS 2 TBSP. BUTTER, SOFTENED
3/4 CUP PLUS 2 TBSP. PACKED BROWN SUGAR
2-1/2 CUPS ALL-PURPOSE FLOUR
1-3/4 TSP. SALT

TOPPING:

1 PKG.  (10 TO 11 OUNCES) BUTTERSCOTCH CHIPS
1/2 CUP PLUS 2 TBSP. LIGHT CORN SYRUP
3 TBSP. BUTTER
2 TSP. WATER
2-1/2 CUPS SALTED CASHEW HALVES

1.  IN A MIXING BOWL, CREAM THE BUTTER AND BROWN SUGAR.  COMBINE FLOUR AND SALT; ADD TO CREAMED MIXTURE JUST UNTIL COMBINED.  PRESS INTO A GREASED 15-IN. X 10-IN. X 1-IN. BAKING PAN.  BAKE AT 350* FOR 10-12 MINUTES OR UNTIL LIGHTLY BROWNED. 

2.  MEANWHILE, COMBINE BUTTERSCOTCH CHIPS, CORN SYRUP, BUTTER AND WATER IN A SAUCEPAN.  COOK AND STIR OVER MEDIUM HEAT UNTIL CHIPS AND BUTTER ARE MELTED.  SPREAD OVER CRUST.  SPRINKLE WITH CASHEWS; PRESS DOWN LIGHTLY.

3.  BAKE FOR 11-13 MINUTES OR UNTIL TOPPING IS BUBBLY AND LIGHTLY BROWNED.  COOL ON A WIRE RACK.  CUT INTO BARS.  YIELD:  3-1/2 DOZEN.

SOUR CREAM CHOC. COOKIES

1/2 CUP BUTTER, SOFTENED
3/4 CUP SUGAR
1/2 CUP PACKED BROWN SUGAR
1 EGG
1/2 CUP SOUR CREAM
1 TSP. VANILLA
1-3/4 CUPS ALL-PURPOSE FLOUR
1/2 CUP BAKING COCOA
1 TSP. BAKING POWDER
1/2 TSP. BAKING SODA
1/4 TSP. SALT
1 CUP (6 OUNCES) SEMISWEET CHOC. CHIPS
1/2 CUP VANILLA OR WHITE CHIPS

1.  IN A MIXING BOWL, CREAM BUTTER AND SUGARS.  BEAT IN EGG, SOUR CREAM AND VANILLA.  COMBINE DRY INGREDIENTS; Gradually ADD TO THE CREAMED MIXTURE.  STIR IN CHIPS.

2.  DROP BY ROUNDED TABLESPOONS 2 IN. APART ONTO GREASED BAKING SHEETS.  BAKE AT 350* FOR 12-15 MINUTES OR UNTIL SET.  COOL FOR 2 MINUTES BEFORE REMOVING TO WIRE RACKS TO COOL COMPLETELY.  YIELD: ABOUT 3 DOZEN.

Nancy, have you seen the recipe on the home page..Sweet and Salty Chewy Pecan Bars..? Sounds like they are right up your alley.
It also looks like a recipe that would be adaptable for almost any cookie base.
If it weren't for the pecans I am sure my grandson would love them.  So this is something I will have to make only if I am brininging them someplace, I couldn't have them in the house for long.

1 PKG. (12 OUNCES) VANILLA WAFERS, CRUSHED

3/4 CUP BUTTER, MELTED
1 CAN (14 OUNCES) SWEETENED CONDENSED MILK
1 EGG
1/2 TSP. MAPLE FLAVORING
1 CUP BUTTERSCOTCH CHIPS
1-1/2 CUPS COARSELY CHOPPED PECANS

1.  IN A SMALL BOWL, COMBINE THE WAFER CRUMBS, SUGAR AND BUTTER.  PRESS INTO A GREASED 13-IN. X 9-IN. BAKING PAN.  BAKE AT 350* FOR 8-10 MINUTES OR UNTIL LIGHTLY BROWNED AND SET.  COOL FOR 10 MINUTES ON A WIRE RACK.

2.  IN A SMALL BOWL, BEAT MILK, EGG AND MAPLE FLAVORING.  STIR IN THE BUTTERSCOTCH CHIPS.  SPREAD OVER CRUST.  SPRINKLE WITH PECANS.  BAKE FOR 18-22 MINUTES OR UNTIL GOLDEN BROWN.  COOL ON A WIRE RACK.  CUT INTO BARS.  YIELD: 3 DOZEN

While this is actually a frosting-less cake, I cut the cake into dessert bars. 

CRANBERRY CAKE

3 eggs
2 Cups sugar
3/4 Cup butter or margarine, softened
1 tsp almond extract
2 Cups all purpose flour
2 1/2 Cups fresh or frozen cranberries, thawed
2/3 Cup chopped pecans

Beat eggs with sugar until slightly thickened and light in color (about 5 minutes).  Add butter and extract.  Beat 2 minutes. 

Stir in flour just until combined.  Stir in cranberries and pecans.

Spread into a greased 9 x 13" pan.  Bake at 350 for 45-50 minutes or until a wooden pick inserted near the center comes out clean. 

Serve with whipped cream or ice cream.  Yields 16-20 servings.

Hi Judy!

I said this before, but I wish you guys could see the pictures for all these recipes that I have posted.  This one looks very yummy.  But then, I love recipes with Cream Cheese or Sour Cream or made with Heavy Whipping Cream.  Just makes everything so rich and yummy.  And yes, very fattening too!  lol

I am pleased that you are enjoying the recipes that I have posted!

Susan, I made the Peanut Mallow Bars on Friday!! I had a craving for peanuts
and thought these would be great!! They are yummy, will be making these
again.  Hubby loves them too!!
