SCANDINAVIAN PECAN COOKIES

1 CUP BUTTER, SOFTENED
3/4 CUP PACKED BROWN SUGAR
1 EGG, SEPARATED
2 CUP ALL-PURPOSE FLOUR
1/2 CUP FINELY CHOPPED PECANS

1.  IN A MIXING BOWL, CREAM BUTTER, BROWN SUGAR AND EGG YOLK.  GRADUALLY ADD FLOUR.  SHAPE INTO 1-IN. BALLS.

2.  IN A SMALL BOWL, BEAT EGG WHITE.  DIP BALLS IN EGG WHITE, THEN ROLL IN PECANS.  PLACE 2 IN. APART ON UNGREASED BAKING SHEETS; FLATTEN SLIGHTLY.

3.  BAKE AT 375* FOR 8-12 MINUTES OR UNTIL EDGES ARE LIGHTLY BROWN.  COOL ON WIRE RACK.  YIELD: 4-5 DOZEN

                            ALMOND  BARS
4 large eggs
dash of salt
2 cups white sugar
1 cup melted butter or marg.
4 teaspoons almond flavoring(extract 2 teaspoons)
2 cups flour
Beat eggs and salt.  Add sugar, butter or marg., and almond flavoring
or extract and mix well. Then gradually add the flour until blended.
Pour into 9x13 and bake at 325 degrees for 30 to 35 minutes.
powdered sugar
almonds slices
Before baking sprinkle with powdered sugar and almond slices.
After baking. Cool and cut into pieces.

These almond bars are 1 of the items in my Christmas care packages.
It is one of the requested items that so many of them want.
I cut them into smaller pieces for the care packages.

I would also like to thank everyone for making this a success by contributing there recipes...we sure are getting a great collection. 
Who knows, maybe the next project will be different recipes for cakes.  Now, who doesn't like cake?!!  Yum!  :')

You know, wouldn't this be neat if we could get cookbooks published on all our recipes that we post!  Wow...that would be AWESOME!!

Here is an easy one.

Golden Peanut Butter Bars
2 Cups flour
3/4 cup firmly packed brown sugar
1 egg, beaten
1/2 Cup cold butter or margarine
1 Cup finely chopped peanut ( or use your favorite nut)
1 (14 ounce) can SWEETENED Condensed milk NOT evaporated
1/2 Cup creamy peanut butter
1 tsp vanilla extract
Pre heat oven to 350 degrees F. Line 13X9 pan with parchment or foil. (it just makes life easier)
In large mixing bowl, combine flour, brown sugar and egg; cut in cold butter until crumbly.  Stir in peanuts.  Reserve 2 Cups of the mixture.  Press remaining into bottom of prepared pan.
Bake 15 minutes or until lightly browned.
In another  mixing bowl, beat sweetened condensed milk, peanut butter and vanilla. Spread over prepared crust; top with reserved crumb mixture. (I like to press the crumb mixture down a bit)
Bake an additional 25 minutes or until lightly browned. Cool Cut into bars. Store covered at room temperature.  Makes 2 - 3 dozen bars.

This one has oatmeal...Healthy??maybe..maybe not!!

Toffee Bars
1 Cup quick cooking oats
1/2 cup flour
1/ Cup packed brown sugar
1/2 Cup finely chopped walnuts
1/2 Cup butter or margarine, melted and divided..Will need 6 Tb and 2 Tb
1/4 tsp baking soda
1 (14 ounce can) Sweetened Condensed milk (NOT evaporated)
2 tsp vanilla
2 Cups semi sweet chocolate chips
Additional walnuts if desired
Pre heat oven to 350 degrees F. Grease or line a 13X9 pan
In large mixing bowl, combine oats, flour, brown sugar, walnuts, 6 Tb butter and baking soda.  Press firmly into bottom of pan.  Bake 10 to 15 minutes or until lightly browned.
In medium saucepan over med. heat combine rest of butter and sweetened condensed milk.  cook until mixture thickens slightly. About 15 minutes.  Remove from heat stir in vanilla.  Pour over baked crust.
Bake 10 to 15 minutes. or until golden brown.
Remove from oven; immediately sprinkle chips on top.  Let stand 1 minute; spread while chips are still warm.  Garnish with extra walnuts if you want.  Press them down firmly if using.  Cool completely.  Cut into bars.  Store covered at room temp.
Makes 3 dozen bars.

These look great,my Mom would have loved the toffee bars.I love cookie bars and pan cookies.These are nice and easy to make on days when I'm cooking a big meal.So nice for desert with a cold glass of milk or a hot cup of coffee.

PEAR CUSTARD BARS

1/2 CUP BUTTER, SOFTENED
1/3 CUP SUGAR
3/4 CUP ALL-PURPOSE FLOUR
1/4 TSP. VANILLA
2/3 CUP CHOPPED MACADAMIA NUTS

FILLING/TOPPING:

1 PKG. (8 OUNCES) CREAM CHEESE, SOFTENED
1/2 CUP SUGAR
1 EGG
1/2 TSP. VANILLA
1 CAN (15-1/4 OUNCES) PEAR HALVES, DRAINED
1/2 TSP. SUGAR
1/2 TSP. GROUND CINNAMON

1.  IN A MIXING BOWL, CREAM BUTTER AND SUGAR.  BEAT IN THE FLOUR AND VANILLA UNTIL COMBINED.  STIR IN THE NUTS.  PRESS INTO A GREASED 8-IN. SQUARE BAKING PAN.  BAKE AT 350* FOR 20 MINUTES OR UNTIL LIGHTLY BROWNED.  COOL ON A WIRE RACK.

2.  INCREASE HEAT TO 375*.  IN A MIXING BOWL, BEAT CREAM CHEESE UNTIL SMOOTH.  ADD SUGAR, EGG AND VANILLA; MIX UNTIL COMBINED.  POUR OVER CRUST.  CUT PEARS INTO 1/8-IN. SLICES; ARRANGE IN A SINGLE LAYER OVER FILLING.  COMBINE SUGAR AND CINNAMON; SPRINKLE OVER PEARS.

3.  BAKE AT 375* FOR 28-30 MINUTES (CENTER WILL BE SOFT SET AND WILL BECOME FIRMER UPON COOLING).  COOL ON A WIRE RACK FOR 45 MINUTES.  COVER AND REFRIGERATE FOR AT LEAST 2 HOURS BEFORE CUTTING.  STORE IN THE REFRIGERATOR.  YIELD: 16 BARS

Here we go, another two for your baking and eating enjoyment....

Chocolate Fudge Pecan Pie Bars
2 2/3 cups flour
1 1/4 cup packed light brown sugar, divided
1 Cup cold butter or margarine
4 eggs
1 Cup light corn syrup
4 ounces unsweetened chocolate, (4 squares) un wrap and melt.
2 tsp vanilla extract
1/2 tsp salt
2 Cups coarsely chopped pecans
Heat oven to 350 degrees F.
Grease or line with parchment a 151/2X101/2 jelly roll pan
Stir together flour and 1/4 Cup brown sugar in a large bowl.  With a pastry blender or two knives cut in butter until mixture resembles coarse crumbs. Press onto bottom of prepared pan.
Bake 10 to 15 minutes or until set.  Remove from oven and with the back of a spoon press crust into corners of pan and against sides of pan.
Beat eggs, corn syrup, remaining 1 cup of brown sugar, melted chocolate, vanilla and salt; stir in pecans.  Pour over crust.  Return to oven.
Bake 25 to 30 minutes or until filling is set.  Cool in pan on wire rack.  Cut into bars.
Makes 3 dozen bars. (Ha ha!!)Wink

Be still my heart, this one is a Chocolate lovers dream......very good the "filling" can be used for all types of bar cookies.

Chocolate Streusel Bars
1 3/4 Cup flour
1 Cup sugar
1/4 Cup cocoa
1/2 Cup butter or margarine
1 egg
1 Can (14 ounce size) Sweetened condensed milk. NOT evaporated
2 Cups Dark Chocolate chips..or Semi sweet can be used
1 Cup coarsely chopped nuts
Heat oven to 350 degrees F.
Grease a 13X9 pan or line with parchment or foil.  Grease foil
Stir together flour, sugar, cocoa in large bowl.  cut in butter until mixture looks like coarse crumbs.  Add egg; mix well.  Set aside 1 1/2 cups of the mixture.  Press the rest onto the bottom of prepared pan.  Bake crust 10 minutes.
Meanwhile place sweetened condensed milk and 1 cup of the chips in medium microwave safe bowl; stir.  Microwave at medium 1 to 1 1/2 minutes or until chips are melted and mixture is smooth.  Pour over crust.  Add  nuts and remaining chips to the reserved crumb mixture.  Sprinkle over the top.
Bake an additional 25 to 30 minutes or until center is almost set.  Cool completely in pan on wire rack.  Cut into bars.  Makes 36 bars.

It's too hot ... it's too hot ...... and I worked at church all day ..... got home at 7:15 and stirred up 3 batches of cookies.  The dough is in the fridge and I'll bake them early tomorrow morning.

CHOC. MALTED COOKIES

1 CUP BUTTER-FLAVORED SHORTENING
1-1/4 CUPS PACKED BROWN SUGAR
1/2  CUP MALTED MILK POWDER
2 TBSP. CHOC. SYRUP
1 TBSP. VANILLA
1 EGG
2 CUPS ALL-PURPOSE FLOUR
1 TSP. BAKING SODA
1/2 TSP. SALT
1-1/2 CUPS SEMISWEET CHOC. CHUNKS
1 CUP (6 OUNCES) MILK CHOC. CHIPS

1.  IN A MIXING BOWL, COMBINE THE FIRST 5 INGREDIENTS; BEAT FOR 2 MINUTES.  ADD EGG.  COMBINE THE FLOUR, BAKING SODA AND SALT; GRADUALLY ADD TO CREAMED MIXTURE, MIXING WELL AFTER EACH ADDITION.  STIR IN CHOC. CHUNKS AND CHIPS.

2.  SHAPE INTO 2-IN. BALLS, PL;ACE 3 INCH APART ON UNGREASED BAKING SHEETS.  BAKE AT 375* FOR 12-14 MINUTES OR UNTIL GOLDEN BROWN.  COOL FOR 2 MINUTES BEFORE REMOVING TO A WIRE RACKS.  YIELD: ABOUT 1-1/2 DOZEN.
