Hi Nikki -- I'm making peanut brittle ... lots and lots of peanut brittle. Last Saturday I was making my American Cheese Sandwiches for a ladies' meeting. On a last minute whim I made a batch of peanut brittle as a little dessert. Whoa ...... that peanut brittle made a big hit and lots of people want some. Sunday morning a woman who had not been at the meeting but she said she had heard about it and wanted some! Roasted nuts would not work in such a recipe. And there's no Asian market within many miles. I have the 5 lbs (I bought another this morning) all shelled and separated into 1 1/4 cup piles then into zip lock freezer bags and then secured in a big freezer bag.
