QUICHE- Mushroom and Onion

3 eggs,1 1/2 cup of half and half, 1/2 # sliced mushrooms, 1 small yellow onion chopped fine,1 teas.salt,1 teas. lemon juice, pinch of pepper,1/2 cup shredded Swiss cheese,1 pie shell either homemade or store bought,Bake pie shell in a pre-heated 400* oven for 8-10 minutes.remove pie shell and lower temp to 375*saute onions and mushrooms in 2 Tabs.butter until most of the moisture is gone and mushrooms are slightly brown add salt an lemon juice stir and set aside.Beat the eggs for 5 min. and then add the 1/2 and 1/2. put the mushroom and onion mixture in the bottom of the pie shell,next pour in the egg mixture in and top with the shredded Swiss cheese bake in the 375 degree oven for 25-30 min.I have even put sliced swiss on the bottom of the baked pie crust instead of on top.This can be made with fried and crumbled bacon,sauted onion and swiss.Or even just sauted onion and Swiss.Serve with a salad and you have a nice light meal.This can be served hot or at room temperature.

The recipe sounds good - mushrooms and onions are two of my favorite ingredients.

Before I figured out how to make pie crust, I made a Sausage and Mushroom Quiche with Ritz cracker crust. Not very healthy but so yummy!

I like Quiche but for some reason have never made one. I just might have to do one this week.

That sounds good Verlee T. What is nice with quiche is you can change the fillings to suit what you want.My husband does'nt care for it but my sons are more than happy to help me eat one.I use refrigerated pie crust the one in the dairy case when I'm in a hurry.You can whip one up in the time it takes to order out or heat something in the oven

I could too Nikki,I love mushrooms and onions.This you can change what ever you would want in it.I make it all different ways.This would be a nice lunch or dinner for you and your hubby,just add a salad and you have a meal.This is even good at room temperature,so if you need to take it somewhere there's no problem.

As I've said before ... I've never made a successful pie crust but many years ago this was almost a staple.

IMPOSSIBLE BACON PIE
12 slices bacon fried crisp and crumbled
1 cut shredded Swiss cheese
1/3 cup shredded onion
2 cups milk
4 eggs
1/4 tsp salt
1/8 tsp pepper
1 cup Bisquick
In lightly greased 10" pie plate sprinkle bacon, cheese and onion. Beat everything else for
1 minute with hand beater. Pour into plate. Bake at 400, 35-40 minutes until knife
blade inserted halfway between center and edge comes out clean. Let stand 5 min before serving.
