I have two cans of Libby's pure pumpkin in my cupboard and no idea what to do with them.  I've searched this site and there are many, many pumpkin recipes but today I can't get inspired.  O

My friend gave me this recipe.



Pumpkin Crunch

1 15 OZ. CAN PUMPKIN
1 12 OZ. CAN EVAPORATED MILK
3 LARGE EGGS
1 ½ CUP SUGAR1 TSP. CINNAMON
½ TSP. SALT
1 BOX YELLOW CAKE MIX
½ CUP CHOPPED PECANS
1 CUP MELTED BUTTERNON-DAIRY WHIPPED TOPPING TO GARNISH

  PREHEAT OVEN TO 350° AND GREASE BOTTOM OF 9 X 13 PAN.  COMBINE PUMPKIN, EVAPORATED MILK, EGGS, SUGAR, CINNAMON AND SALT IN A LARGE BOWL.  POUR INTO 9 X 13 PAN.  SPRINKLE DRY CAKE MIX EVENLY OVER PUMPKIN MIXTURE.  TOP WITH PECANS AND THEN DRIZZLE MELTED BUTTER OVER TOP. BAKE AT 350° FOR 50-55 MINUTES OR UNTIL GOLDEN BROWN.  LET COOL AND SERVE CHILLED.  GARNISH WITH NON-DAIRY WHIPPED TOPPING WHEN SERVED.

There is a lot you can make out of pumpkin. A lot of the recipes for
the day use pumpkin in them. The recipe of the day is on this site.
