I have always had problems with crusts until I decided to try the method I heard about on America's Test Kitchen.
They suggest using Vodka as part of the liquid used for the dough.
The idea behind that is the alcohol evaporates and because of that you can use more liquid making the dough much easier to handle and roll out.  (I also made a lemon pie using lemoncello and it was great.)
Also remember to use the lower rack of the oven so the pie crust bakes and does not stay or get soggy.
I have also found that the "plain old glass" pie plate works the best.  And you can monitor the crust to be sure it is a nice color.

Lois, I finally mastered my Mom's pie crust recipe about 15 years ago. And then 2 years ago my older sister introduced me to pre-made frozen pie crust from Trader Joe's. My family never notices the difference, and it's so much easier. Highly recommend then!

Thanks for the tip, Nikki! I'll have to try it. I've been using the pre-made crusts, but I really miss the "old fashioned" home made crusts!!

I always make homemade pie crust.  I do it by hand but I know many bakers who use a food processor to mix it up.

Hi Lois, my friend Ruth makes the most delicious pies and in exchange for a recipe I have that she wanted, she gave me her crust recipe.  It is one that has been around for a while.  I'm posting it, but you may already have heard about this one:

FLAKY PIE CRUST

4 cups flour
1 3/4 cup shortening
1 Tbs sugar
2 tsp salt
1 Tbs vinegar
1 egg

Mix the flour, sugar and shortening together until blended.

Mix the water, vinegar and egg together and add to the dry ingredients, mixing uintil moist.  Form into a ball and refrigerate at least one half hour.  Roll out.

Makes 2 crusts
