Welcome to VBB, you will like it here, great people and we all love to share baking tips and recipes.  I have a recipe for pumpkin bread that is really good, easy and moist.  I need to dig it out and post it.  I also have a recipe for Cranberry Nut bread that is very good too!  I was thinking of try the recipe listed on Nestle for the Pumpkin Whoopie Pies!

The drought here in central Il has affected our local pumpkin farmers.  We are a major source of pumpkin for the canneries.
 On TV they were reporting that supplies are down this year so keep a watch out when the next crop appears in the stores and stock up for pies and bread.

Last week I made the Pumpkin Bread Pudding that is on this site.  Oh my gosh is is good.  I think the sauce that is supposed to go with it is a yogurt brown sugar but I used caramel.  Had that for dessert and it was wonderful.  Had some without the caramel for breakfast Sunday morning and it was so tasty even the next day.
This recipe is a keeper that is for sure.
Hope someone else tries it ....... let me know what you think.

I am still looking for my pumpkin bread recipe but I did find my Cranberry Orange Nut Bread that is very yummy!

2 CUPS FLOUR
3/4 CUP SUGAR
1 1/2 TSP. SALT
1/2 TSP. BAKING SODA
1 CUP CHOPPED CRANBERRIES
1/2 CUP CHOPPED WALNUTS
1 TSP. GRATED ORANGE PEEL
1 EGG
3/4 CUP ORANGE JUICE
2 TBL. OIL

MIX TOGETHER AND BAKE IN A LOAF PAN.  350* FOR 50 MINUTES.

I use fresh Cranberries! 

I was thinking of making this for Christmas.  It funny, I have 4 bread recipes, I make for Thanksgiving the Pumpkin, Christmas is the Cranberry Bread, Easter I make the Coconut bread and Zucchini is in the summer time!

Here is my pumpkin bread recipe; I finally found it.  It is so easy, moist and gets great every time!

PUMPKIN BREAD

3 CUPS SUGAR
3 1/2 CUPS FLOUR
2 TSP. BAKING SODA
1 TSP. NUTMEG
1 1/2 TSP. CINNAMON
1 CUP VEG. OIL
4 EGGS
2/3 CUP WATER
1 SMALL CAN PUMPKIN
1 CUP CHOPPED WALNUTS OR PECANS
2/3 CUP OF GOLDEN RAISINS

IN LARGE BOWL, SIFT ALL DRY INGREDIENTS.  MAKE A SMALL WELL IN THE CENTER OF BOWL; ADD OIL, EGGS, PUMPKIN AND WATER TO CENTER OF WELL.  MIX WITH A RUBBER SPATULA UNTIL BLENDED. MIX IN THE NUTS AND RAISINS.  POUR INTO GREASED LOAF PAN AND BAKE AT 325* FOR 1 - 1 1/2 HOURS.

I thought I would share my Coconut bread with you too.  This is my favorite!!

COCONUT BREAD

3 CUPS FLOUR, SIFTED
1 TSP. BAKING POWDER
1/2 TSP. SALT
1 CUP SUGAR
1 CUP SHREDDED COCONUT
1 EGG BEATEN
1 CUP MILK
1 TSP. VANILLA

SIFT DRY INGREDIENTS AND MIX.  COMBINE LIQUID INGREDIENTS, BLEND CAREFULLY.  LET STAND FOR 20 MINUTES.  POUR INTO WELL GREASED PAN AND BAKE AT 350* FOR 45-50 MIN.

 Thanks for posting the pumpkin bread recipe.  I am the only one that likes it & I do not like to make it just for me, but since I can freeze  2 of the 3, I will be making them & MAYBE I will add cranberries to 1, extra nuts to 1 & cho. morsels to the last one.

I happen to have an amazing recipe for Pumpkin Bread.  Best thing is that the recipe makes 3 loaves. We all know one loaf is never enough..eat one, freeze one and give one. Pumpkin Nut Bread 4 eggs 3 Cups sugar 1 Cup oil..I have used 1/2 Cup oil and 1/2 Cup pumpkin 1/3 Cup water 1 Can (30 ounces) Pumpkin Pie mix..See Note Below.. 3 1/2 Cups flour 2 tsp baking soda 1 1/2 tsp salt 1 tsp cinnamon 1 1/2 Cups chopped dates. ( I have used all dates or a mix of dates and dried cranberries) 1 Cup chopped walnuts Pre heat oven to 350 degrees F. Grease and flour 3 9X5 loaf pans In a large bowl of mixer lightly beat eggs.  Gradually beat in the sugar, water, oil and pumpkin.  Add flour, baking soda, salt and cinnamon; mix well.  Stir in the dates and nuts. Divide the batter between all the pans.  Bake 55 to 60 minutes or until bread begins to pull away from pan.  Cool in pans for 30 minutes, remove from pans and cool completely on racks. In place of the pumpkin pie mix I use 100% pumpkin puree (2 fifteen ounce cans) and I then add either pumpkin pie spice or for each can I add cinnamon, ginger and a bit of clove.   I mix the pumpkin and the spices the day before and place in the refrigerator over night to allow the spices to blend. I do not buy the pumpkin pie mix as I keep cans of  pumpkin puree on hand all the time. I have also added a big handful or two of fresh cranberries to this recipe.  Very tasty. Adds a bit of tart to the sweet of the bread.

I use just the pumpkin and add the extra spices. I always buy the pure pumpkin as there is so much more I can do with it. The 2 small cans is the same as the 30 ounce pie mix weight wise just add the spices.
