I happen to have an amazing recipe for Pumpkin Bread. Best thing is that the recipe makes 3 loaves. We all know one loaf is never enough..eat one, freeze one and give one. Pumpkin Nut Bread 4 eggs 3 Cups sugar 1 Cup oil..I have used 1/2 Cup oil and 1/2 Cup pumpkin 1/3 Cup water 1 Can (30 ounces) Pumpkin Pie mix..See Note Below.. 3 1/2 Cups flour 2 tsp baking soda 1 1/2 tsp salt 1 tsp cinnamon 1 1/2 Cups chopped dates. ( I have used all dates or a mix of dates and dried cranberries) 1 Cup chopped walnuts Pre heat oven to 350 degrees F. Grease and flour 3 9X5 loaf pans In a large bowl of mixer lightly beat eggs. Gradually beat in the sugar, water, oil and pumpkin. Add flour, baking soda, salt and cinnamon; mix well. Stir in the dates and nuts. Divide the batter between all the pans. Bake 55 to 60 minutes or until bread begins to pull away from pan. Cool in pans for 30 minutes, remove from pans and cool completely on racks. In place of the pumpkin pie mix I use 100% pumpkin puree (2 fifteen ounce cans) and I then add either pumpkin pie spice or for each can I add cinnamon, ginger and a bit of clove. I mix the pumpkin and the spices the day before and place in the refrigerator over night to allow the spices to blend. I do not buy the pumpkin pie mix as I keep cans of pumpkin puree on hand all the time. I have also added a big handful or two of fresh cranberries to this recipe. Very tasty. Adds a bit of tart to the sweet of the bread.

Thanks for the recipe. I will try it as soon as I get some Pumpkin Pie Mix. I also like to add things like cranberries or raisins.
