I made my wife the creamy pumkin soup for lunch. Very easy to make and she loved it.

The soup was light and with the amount it makes we will have it for awhile.

Jeff, since you will have more soup if you want to change the flavor a bit for the second time a round add a bit of peanut butter, maybe 1/4 cup to a serving for 2 or 3 and if you like a little heat add some red pepper flakes.
Believe it or not the flavor of pumpkin and peanut butter go very well together.  Sort of a take off of a recipe called Ground Nut Stew.  I add the pepper flakes just cuz I like to spice things up a bit.

Yummy!  Pumpkin and peanut butter sounds so good together.  I'll have to try that.  Thanks Nikki.

Thanks for the added ingredient. I'll try it. Since then I made the pumpkin roll. Wanted to test it before Christmas breakfast.
