My niece kept telling me about popovers which I had never heard of,so I asked her for her recipe and last night I made some more because we have had them a couple of times already I think they are great served warm right out of the oven with jelly,jam,honey and I used apple butter on mine. Here is what you will need 4 eggs, 2 cups of milk, 2 cups of AP flour and 1 teas. kosher salt. Preheat oven to 450* beat eggs well,stir in milk,add flour and salt stir just until mixed, Pour into large greased muffin tins 2/3 full ,I don't have large muffin tins so I ended up with a dozen and a half instead of a dozen Bake at 450* for 30mins.do not open door.I put a small slit in the side of the popovers after baking to allow the steam to escape and removed to a cooling rack right away.They are almost like a cream puff kind of hollow in the middle with the just amount of room to put your favorite jam or jelly in.They can be served with meat and gravy also.
