Shepherd’s Pie
(This is an OLD family recipe and was my Mom's way of using leftover vegetables and mashed potatoes.)
1 lb. hamburger
2 Tbsp. water
1 Tbsp. onion; minced
1 Tbsp. parsley; minced
¼ - ½ tsp. salt
Dash pepper
1 8 oz. can tomato sauce
1-2 c. leftover veggies OR 1 10-3/4 oz. can vegetable soup
Mashed potatoes to cover top of meat mixture; at room temp.
Cheese; grated
Paprika
Parsley flakes; optional
Steam hamburger (told you it was an OLD recipe) and water until meat is cooked but not brown in a skillet. Drain. Add onion, 1 Tbsp. parsley, salt, pepper, tomato sauce and veg. Mix thoroughly and simmer until mixture is hot. Spoon hamburger mixture into a flat casserole or baking dish and top with mashed potatoes. Sprinkle paprika, then cheese over potatoes, and then parsley flakes. Bake at 350 for 15 min. Serves six.
