I was looking around and came upon this recipe and thought I would share it with all of you.
I plan on making this one real soon during the holidays.




PLUM CAKE

1 cup plums, pits removed and sliced into small wedges
1 tsp lemon juice
1/2 cup granulated sugar
1/2 cup unsalted butter
1 egg
11/4 cups all-purpose flour
Streusel topping
1/4 cup brown sugar
1/4 cup granulated sugar
2/3 cup all-purpose flour
1/4 cup unsalted butter, chilled and cut into small cubes
Directions
Preheat the oven to 350°F. Butter the bottom and sides of an 8 inch square cake pan.
In small saucepan, add the plums and lemon juice. Heat on low for 5 minutes or until soft. Add the 1/4 cup sugar to the pan and cook gently until dissolved. Simmer for 3-4 minutes until very thick, stirring occasionally.
Beat the butter and 1/4 cup of sugar together in a bowl until light and fluffy. Add the egg, then mix in the flour to make a soft dough. Press the mixture into the bottom of the prepared cake pan. Bake for 15 minutes. Remove from oven and spoon the cooked plums over the base.
Meanwhile, to make the topping, mix the sugars and flour together in a small bowl. Add the butter cubes and mix until coarse crumbs form. Add topping mixture over the plums.
Return the pan to the oven and bake for another 30 minutes, or until topping is lightly browned. Allow to cool before serving

Trying to get a ride to the store and you have just made me add plums to the list.
This sounds like it would be a great "anytime" cake.  Problem is I would make it for breakfast and eat it all day.

Nikki - I wish we lived closer ....... lol - I'm a great shopper ........ I've been to Walmart twice today!  I would happily take you shopping anywhere.
