PISTASHIO ALMOND CAKE WITH WHIPPED CREAM FROSTING

Bake @ 350* for 35-40 or until done Insert toothpick into the center of the cake to check.Well here I am laid down this afternoon for a nap,now I can't sleep.I just finished this cake and it's in the fridge.

PISTASHIO ALMOND CAKE WITH WHIPPED CREAM FROSTING

1 Package of yellow cake mix
1 small package instant pistashio pudding
4 eggs beaten
1 cup club soda
1/2 cup oil
1/2 cup chopped almonds (optional)

Combine all ingredients in a bowl and mix well,beat with electric mixer for 2 minutes.
Pour batter into a well greased and floured 9" tube pan or bundt pan.( I used my 9" spring form tube pan) Bake as directed
When the cake is done allow it to cool in pan for 10 minutes turn out onto a cooling rack and allow it to cool completely.

FROSTING

2 Cups heavy whipping cream
1 1/2 cup cold milk ( I used 2% )
2 small packages instant pistashio pudding
Mix all ingredients and whip on high until it reaches stiff peaks.Frost the cooled cake.
Sprinkle 1/2 cup sliced almonds on the top of the cake.Store in the fridge.
This was my brothers ex wifes recipe.When she left Thank God she left this behind also lol lol lol !

This is a great cake,very moist.I took a couple of pictures but my DIL will have to take care of loading them,can't do it on my computer.

Gale, Thank you for sharing your pistashio almond cake with whipped
cream frosting. Would love to see the picture of it! My bil is coming
to CA in April and this would be a nice cake for him. Last year he
had the Italian Love Cake and loved it. lol lol

i found that recipe in the swapped recipes before and made it twice-------me and one grand nephew--and my bil -------were the only ones that ate it-------so i haven't made it again---------------but it was very, very good-------------people just don't like to try things because they think they won't like it

My sister in law left this recipe when her and my brother got divorced.This was the only thing that she made that was good ! lol! .I want to experiment with this recipe but use chocolate instead.I think that would be goodChocolate pudding in the cake and frosting,with the almonds on top.

when asked for 1 of her recipes always leaves out at least 1 ingredient. What a surprise!!!! I have

My SIL was a horrible cook,that's why my brother started cooking. He said if he wanted to eat he would have to do the cooking.Twenty years have passed and I have to say my brother is a fantastic cook!

Now you have me....with the chocolate pudding.

I think it would taste great. I like pistachio but the almonds play so well with chocolate.

Not only do I not have to eat her terrible cooking ,I don't have to see her either ! lol lol lol Well I made this recipe only I did it with chocolate cake and pudding an sprinkled almonds on top.I took a picture but will have to wait until my DIL posts them for me.It is great!

When we got married 50 years go in May;hubby wanted a pistachio cake for our wedding dinner. I agreed( reluctantly); Iwanted raaspberry &peach.HisMother said that it wasthe bride's choice & not the groom'ss. Since she was paying, she ordered peach( forgot the raspberies)
'll try to make it this May for our 50th anniversary; a small(1/2 size ) since there will only be the two of us celebrating
I may make any extra batter in mini muffin tins to feeze for noyment over the summer months,company possible ; adding plain fresh whipped ream , at serving time
