Pineapple Banana Nut Cake

 PREHEAT OVEN 350* Bake 30-40 mins check after 30 min

In a large bowl mix together well : 3 cups flour, 2 cups sugar, 1 teas. baking soda, 1 teas.cinnamon, 1/2 teas. salt

In another bowl mix together to blend well: 1 cup oil, 2 cups sliced bananas, 1 cup undrained crushed pineapple, 3 eggs, 2 teas. vanilla, 1 cup chopped walnuts, stir in flour mixture and mix well. pour into a greased 9x13 or 2 -9" cake pans bake as instructed above remove from cake pans and cool completely on cooling racks.I cooled in 9x13 pan and served from cake pan.When completely cool frost with frosting below.

FROSTING: 2-8oz. cream cheese,2 sticks unsalted butter at room temperature,2 teas. vanilla, 3 cups powder sugar.This makes a large amout of frosting,I was able to frost the 9x13 cake left in the pan with 1/2 frosting recipe. Beat together the cream cheese and butter until completely mixed,beat in vanilla,then add and beat in one cup of powder sugar at a time beating well after each addition.Frost cake.More nuts can be sprinkled on top if desired.Store cake in fridge.This is a rich moist cake ,just wonderful. I hope you enjoy this!

I love banana, I love pineapple and I love nuts .... what a combination.
Think I could add a cup of coconut?

Just a suggestion if you add coconut, and I think that would taste great by the way, process it a bit so you don't have long strings of coconut in the cake.  You could process it in a blender of in a food processor.

This makes me think of carrot cake, which has pineapple in it, too.  Why not add pineapple to other cakes that have fruit in them, too?  This recipe sounds so good, and with the cream cheese icing no less.

That sounds like one I'll have to try. l sometimes have bananas that are riper than I like to eat, as I like mine tinged a bit with green.  I usually make a chocolate chip banana cake but I'll try this one.  I love pineapple and usually have some on hand.
If anyone would like the chocolate chip banana cake recipe I can post it on the recipes section (that is if I  can get in to be able to post)
This cake also has a layer of cinnamon/sugar along with the chips in the center and topped with the same.

I printed the recipe to suit me - lol ---- It looks like this.

Chocolate Chip Banana cake

1/2 c oil

2 eggs

1 t vanilla

2 c sugar

3 bananas

2 t baking powder

2 t baking soda

3 c flour

1 c sour cream or plain yogurt

1 t cinnamon

1 1/2 cups chocolate chips

1/2 cup brown sugar

1 t cinnamon

Cream oil and sugar ( I only use 1 1/2 c sugar), add eggs.

Beat until smooth. Add and banana. Mix flour, baking powder

and soda' add to banana mixture alternately with` sour cream,

ending with dry ingredients. Pour 1/2 batter into greases 9x13 pan.

Sprinkle with half the cinnamon/brown sugar mixture and chips.

repeat layers Bake at 350 for about 44 to 50 minutes


And this morning I got some nice bananas ....... I'll wait a day or two for them to ripen more so I can try Gale's cake
