Got it Judy - Thank You!! I printed the recipe to suit me - lol ---- It looks like this. Chocolate Chip Banana cake 1/2 c oil 2 eggs 1 t vanilla 2 c sugar 3 bananas 2 t baking powder 2 t baking soda 3 c flour 1 c sour cream or plain yogurt 1 t cinnamon 1 1/2 cups chocolate chips 1/2 cup brown sugar 1 t cinnamon Cream oil and sugar ( I only use 1 1/2 c sugar), add eggs. Beat until smooth. Add and banana. Mix flour, baking powder and soda' add to banana mixture alternately with ` sour cream, ending with dry ingredients. Pour 1/2 batter into greases 9x13 pan. Sprinkle with half the cinnamon/brown sugar mixture and chips. repeat layers Bake at 350 for about 44 to 50 minutes And this morning I got some nice bananas ....... I'll wait a day or two for them to ripen more so I can try Gale's cake

Interesting how the recipe looks on this site.  That was not the way I posted it.  It looks hard to read.  It was a good thing I didn't wait until I got home last night as I couldn't log on AGAIN.  I found the recipe in some of my mail at work as one of my co-workers had wanted the recipe.  I had sent it to myself at work so I could forward it to her.  it took a few minutes to find, but I did.  It is a favorite cake for lots of people.

Well, the Pineappl Banana Nut Cake with lots of coconut was NOT like I wanted and was trying to get.
I wanted and expected a nice cake , a good cake I could carry to friends.
What I ended up with is such an unusual cake, so very delicious that I'm eating the whole thing!!
It's not a "good" cake ..... it's wonderful
I can't stop. 
I can't share this. 
I'll never make this monster again.  Laughing

Carol, I added a packed cup of regular coconut .... and I added some extra walnuts just because the bag was "almost" empty.
I think the cake can take even more coconut. I know it could take more walnuts.
I wonder about bananas .... I had two very skimpy cups of bananas.
Exactly the right amount of pineapple.. .. lol

Jeannine - I wasn't certain about the the banana "slices".  I thought bananas were always smashed when used in a cake.  In this one the banana chunks are great ... just like the pineapple pieces.   It's ALL good!!

It's interesting to read about all the changes to this cake.  Recipes are just a base from which to start, then come up with something new by varying the recipes.  Good old trial and error.  And mistakes.  That's how we get new dishes.

Something else ............ Gale's cream cheese/powdered sugar frosting for this cake is very,very good.  This was the first time I've ever made a frosting like that (a stick of butter!!!???!!!) so I was skeptical.  And I loved it - REALLY fine frosting.
Like she said 1/2 of the recipe is all you need for a 9x13 cake in the pan.  It's a wee bit more than enough. 
It's so good I've printed a copy of just that recipe so I can easily find it when I need a recipe for any cake frosting.
