hee hee ................... A keeper for sure.  Right now I'm keeping it in my 'fridge.  Oh, shame on me.
A big cake like that and I'm eating it myself ...... eating it with a couple scoops of vanilla ice cream.

This morning a man from my cable company came to move a TV  connection or me.   LOL.  He walked in my front door - looked at me and said, "You're the lady with the cookies!  I was here a year ago and you gave me me cookies".  This time I gave him two big slices of the cake and he was delighted.

Here I go again - lol.  The last batch of Pineapple Banana Nut Coconut cupcakes is in the oven. 
The batter created 33 big cupcakes !!
I haven't made frosting yet but I've eaten two from the first batch.
Oh, so good.

I somehow counted wrong. 
I got  42 cupcakes.

Thank you -- this is one I'll try.  I don't do many cakes but this sounds so very good. I love banana, I love pineapple and I love nuts .... what a combination. Think I could add a cup of coconut?

this is very similar to hummingbird cake,,,an old Southern Living recipe,  Ihave made it for years.  It does call for coconut and uses pecans instead of walnuts.   Everyone loves it />

Hi Carol -- I'm glad to meet you Laughing  I'm really ashamed of how I'm gobbling these cupcakes.
But I'd sure love to try your hummingbird recipe - please.
Until I started being part of this forum I never used walnuts and never had even  tasted a macadamia - never.  I just used pecans.
And now I love and use all of them.
That "Hummingbird Cake" rings a very faint bell.  I can't remember if I ever made it or just tasted it.

I still subscribe to Southern Living too.

Hi Carol welcome to VBB.I have heard of Hummingbird cake,but have never tried it.I went to my family reunion and this is the (UnBirthday cake) that my cousin brought.We had an Un Birthday cake because we are never together to share one another's birthdays.This was a huge hit at the gathering and she shared this with me.This is definitely going into my family favorites.I love coconut but unfortunately no-one else here does.

Hello Everyone,
Here is a recipe:
HummingBird Cake
Ingredients

-3 cups all-purpose flour 

-1 teaspoon baking soda

-1 teaspoon salt 

-2 cups sugar 

-1 teaspoon ground cinnamon 

-3 large eggs, beaten 

-1 cup vegetable oil 

-1 1/2 teaspoons vanilla extract 

-1 (8-ounce) can crushed pineapple, undrained 

-1 cup chopped pecans

-2 cups chopped bananas

-1/2 cup chopped pecans

Preparation

1. COMBINE first 5 ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened. (Do not beat.) Stir in vanilla, pineapple, 1 cup pecans, and bananas.

2. POUR batter into three greased and floured 9-inch round cake pans. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks.

3. SPREAD Cream Cheese Frosting between layers and on top and sides of cake; sprinkle 1/2 cup chopped pecans on top. Store in refrigerator.

If you do not want store bought frosting  make this recipe:

Cream Cheese Frosting:

1/4 cup (57 grams) unsalted www.joyofbaking.com/Butter.html" rel="nofollow">butter, room temperature

8 ounces (227 grams) cream cheese, room temperature

1 pound box (454 grams) (about 3 2/3 cups) confectioners (powdered or icing) www.joyofbaking.com/sugar.html" rel="nofollow">sugar, sifted

1 teaspoon (4 grams) pure vanilla extract

Marie - I strongly suggest that you never, never, never make that Pineapple, Banana, Nut cake.
It's addictive so should be avoided. Wink

lol - I bet I drive up the price of canned pineapple!!

FROSTING: 2-8oz. cream cheese,2 sticks unsalted butter at room temperature,2 teas. vanilla, 3 cups powder sugar.This makes a large amout of frosting,I was able to frost the 9x13 cake left in the pan with 1/2 frosting recipe. Beat together the cream cheese and butter until completely mixed,beat in vanilla,then add and beat in one cup of powder sugar at a time beating well after each addition.Frost cake.More nuts can be sprinkled on top if desired.Store cake in fridge.This is a rich moist cake ,just wonderful.
