 I'm planning to make this tomorrow with stew for dinner. I thought this was a different take on bread. This recipe is from livebetteramerica.com. I like this site because it changes recipes for a healthier version (and you don't have to think on your own!) Sorry the picture is so big! I just learned to copy & paste.

Pepper Jack Cheese Quick Bread

Pepper Jack Cheese Quick Bread

Ingredients

cups Gold Medal® all-purpose flour
1/2
cup shredded, reduced-fat pepper Jack cheese (2 oz)
1
teaspoon sugar
1
teaspoon baking powder
1/2
teaspoon baking soda
1/2
teaspoon salt
1
cup buttermilk
1/4
cup canola oil
1/2
cup egg substiute or 2 eggs, slightly beaten

Directions

  • Step1.  Heat oven to 350°F. Lightly grease bottom only of 8x4- or 9x5-inch loaf pan with shortening or cooking spray.

  • Step2. In large bowl, stir flour, cheese, sugar, baking powder, baking soda and salt. Stir in remaining ingredients just until moistened (batter will be lumpy). Spread in pan.

  • Step3. Bake 35 to 45 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 5 minutes in pan on cooling rack. Loosen sides of loaf from pan; remove from pan to cooling rack. Cool 30 minutes before slicing.

This sounds good.  I am going to try this.
When I make cornbread I shred cheddar cheese or pepper jack (depending on who is having dinner) and I dice up a jalapeno pepper or two and toss that in along with a can of creamed corn.
This sounds like it would be very good with a chicken chili, a tortilla soup.
Thanks for the recipe.
By the way I like the large photo shows the bread very nicely. And I was not sure what the texture would be since there is no yeast. So it is nice to have a clear photo.

Looks delicious, but I would have a hard time with it....I have a spasmatic throat.  I cannot eat anything that is too hot, too cold, too spicy, too "tomatoy", just about "too" anything!  Not very much fun when it comes to eating out.
