Pecan Pie Bars

Another old recipe that I haven't made for years

PECAN PIE BARS

3 eggs
2 1/4 cups packed brown sugae
2 cups flour
3 tsp baking powder
1 tsp salt
1 1/2 tsp vanilla
2 cups chopped pecans

Beat eggs, add sugar, stir in mixture of flour, baking powder and salt. 
Add vanilla. Add nuts.
Batter will be stiff.  Spoon into 9 x 13 greased pan
Preheat oven to 300 ... bake 30 - 35 minutes - until toothpick in center
comes out clean.   Cool before serving.

That sounds yummy!  I will have to put this on my list to make. 

By the way, I got the ingredients at the store this week to make the ice cream cookies!  Actually, I got the ingredients to try 3 of the recipes from VBB!

Susan - my cupboard's collection of baking goods for cookie recipes on this site is PACKED.
I'm going to have to figure out a way to store this stuff.

And I guarantee you'll love those ice cream cookies .... Last time I made them I was out of ice cream cones,
but they turned out just fine.  (of course I now have more cones packed in the cupboard -- all I have to do is FIND them)

These are a favorite of mine.  I love love  pecan pie.  But I am more fond of the pecans and just a little of the "custard" so these bars are the perfect blend. No one else in the family likes pecan pie anyway so I make these and I can have one or two or three..... and not have a whole pie.  I have found that they freeze well so I am not "tempted" to eat all of them right away. I also like the crust on these better than a pie crust that can get a bit soft.
I have also scattered a cup full of chocolate chips over the top just as they come from the oven wait a bit and spread the melted chocolate over the top. Makes a yummy dessert into a VERY yummy dessert.

When I was typing it here I wondered, "This NEEDS chocolate.  How can I get chocolate into this dish?"

Give me almost any recipe and I can probably find a way to add chocolate.  I know given any recipe I can find a way to make it more fattening!
I honestly cant remember where I got the recipe for these Bars.  It is written on a piece a paper in a spiral notebook that I have had for years.  I did make one attempt to go through and "weed out" ones I have not made in a while but I couldn't bring my self to toss many out. I think I tossed out casserole recipes, NEVER toss out a dessert recipe!

Mine (like 90% of my recipes) is scrawled on a 3x5 index card.  I'm slowly printing them in this computer thing hoping to get it to about 3 x5 so I can put the new, neat thing over the old one.

Thanks for the recipe Nancy.  I love pecan pie, but I can't justify baking one just for me lol.   Freezing most of them might keep me on track to get rid of those five pounds I "found" over the holidays.

Thanks for the recipe Nancy,this looks great! We have our Sunday family dinner every week and this looks like a winner to me.Everyone here loves pecans and will enjoy this for desert.I love what I call 9x13 baking especially went I'm making a big dinner.
