PEANUT BUTTER NOODLES

PEANUT BUTTER NOODLES
1/2 cup chicken broth
1 1/2 tablespoons minced fresh ginger root
3 tablespoons soy sauce
3 tablespoons peanut butter
1 1/2 tablespoons honey
2 teaspoons hot chile paste (optional)
3 cloves garlic, minced
8 ounces Udon noodles
1/4 cup chopped green onions
1/4 cupchopped peanuts

Directions

  1. Bring a large pot of water to a boil. Add noodles and cook until tender according to package directions. Drain.
  2. Meanwhile, combine chicken broth, ginger, soy sauce, peanut butter, honey, chili paste, and garlic in a small saucepan. Cook over medium heat until peanut butter melts and is heated through. Add noodles, and toss to coat. Garnish with green onions and peanuts

Loving peanut butter as I do, this sounds very interesting!  Thanks so much for the recipe!  I hope it comes out as good as it sounds.  My husband will only eat peanut butter when I spread it in celery.  Perhaps I can change his mind with these noodles!!  Thanks again!

I'm anxious for someone to try this and report back here as to what they think about this recipe. It initially sounds good to me, and may work with some chicken added to it?

 Gale, I know that you & I think sesame seeds and oil are good on everything, right? That's you? Sesame oil on brown rice...and peanut butter noodles. Yum!

Hi Vicki yes that would be me :) I haven't had brown rice in decades but now I think it may be the time to revisit that,of course with sesame oil and maybe some seeds too! My sister married my brother in law when I was three.He was Japanes and his family lived across the street from us.I had the good fortune to be able to go across the street and his mom always fed my neices and I was always invited for dinner.I really learned to love Japanese food.One of my favorites is Wakame salad which is a seaweed salad with a dressing of toasted sesame oil,sesame seeds,sugar and rice wine vinegar.I'm ttotally addicted to it.Have you ever eaten that?

Just a thought if you can't find Udon noodles I would think that you could use the Ramen noodles as many as it takes to have 8 oz. (Ramen Noodle soup) instead.Just make the broth from one of the packets according to package directions and only use what the recipe calls for and dump the rest.Udon and Ramen are both wheat noodles the udon is a little thicker so watch the cooking time so they don't get over cooked.

Verlee,We have eaten peanut chicken many times and it is very good.Peanut Butter is the base of the sauce used in that.They serve it with rice but the noodles should be just as good.

 Gale, I've never eaten that exactly but I have eaten seaweed soup and liked it! Can you give me the directions?

Here you go Vicki. The type of seaweed that I get is a lot darker than pictured.I'm going to try and find the type I buy so you know what to look for.There are several types and one or more types can be used I only get one type because some of this stuff can run into some bigs bucks.I'm usually good for $100 everytime I go to the Import store there are just so many things that I love there.


WAKAME (seaweed) SALAD
1/2 Oz. dried Wakame
3 Tabs.soy sauce
3 Tabs.rice vinegar
1 teas.sugar
2 Tabs.toasted sesame oil
1 teas.fresh grated ginger root
1 Tabs.toasted white or black sesame seeds or both like I do.
Soak dry wakame in warm water for 5-7 mins.
Drain and rinse with cold water,I blot it dry with a towel.Kind of roll it and julienne
cut the seaweed.I always seem to get the broader kelp so it really needs to be cut kind of fine
Mix together soy sauce,vinegar,sesame oil,ginger and sesame seeds,whisk well
and pour it over the well blotted seaweed.Chill in fridge prior to serving,toss it also
before serving to evenly distribute the dressing

Thank you this is one of my favorite dishes.
I like the cold noodle as well as hot noodle dishes.
This has been copied directly into the back of a favorite Asian cookbook.

I never thought I would eat seaweed but this looks really good. I have printed
and will make after I find the wakame. I like that is has fresh grated ginger in
it. We don't have any Asian stores around here. If all else fails I will get it at
the inport store in Grandville, MI in Sept. Will also check on line. Thank you
for sharing your recipe.

Thanks for posting the noodle recipe Gale.  I make something similar using vermicelli noodles.  In fact I made them tonight to go with my salmon.  The original recipe uses chopped chicken but since it's Friday I figured I would just leave that out lol.

There is a huge Asian market in a town not that far from me.  Mitsuwa Market in Arlington Heights has all sorts of items as well as several little restaurants in side the store.  I love wandering around and looking at all the different items.  They sell Sushi grade fish, every type of noodle and seaweed.  It is like a vacation to another land wandering around.  I happen to be going in that direction today and I may stop to check out the seaweed for a salad later this week.
