In my oven this morning were the cranberry chocolate chip pecan cookies. They are really good. I didn't chop the cranberries and all went well. I'm all for saving time and I know cutting dried fruit can get to be a sticky mess.

Judy -- I sure agree that chopping dried fruit is no fun.
I've tried it every way I can think of and the one I choose is to chop with scissors.

Judy...I have been looking for the PERFECT Shortbread recipe...are you in possession of the perfect one I have been looking for?
The perfect shortbread is great on it's own but is also the basis for many great recipes. I want to make Millionaire's Shortbread but am holding off for the shortbread that looks the best.

Millionaire's Shortbread is a bar cookie with a shortbread base and a topping of caramel and then once the caramel has set chocolate is spread on top of the caramel.

I'll check. The one I made the other day would probably not be the perfect one. I found it a bit dry pressing it into the pan. I have others that might be better.

I made the Sticky Ginger Squares that Nikki said were so good. They are yummy!!
I printed the recipe from the kingarthurflour.com site! My Mom would have loved
these squares! I would always take her a container of crystallized ginger when I
went back to MI to see her. Another great recipe Nikki!!

Yesterday, I spent the entire morning making some Kiflies. I filled some with apricot preserves, cherry preserves and fresh ground nut filling. I used a new recipe for the dough for the very first times....and they turned out super...everyone is enjoying them...definitely will make this recipe again...

The cupcakes are called:
BLACK BOTTOM CUPCAKES

TOPPING
1- 8 OZ CREAM CHEESE
1/8 TSP. SALT
1 UNBEATEN EGG
1/3 CUP SUGAR
1- 6 OZ CHOC. MORSELS

BATTER
1 1/2 CUP FLOUR
1 CUP SUGAR
1/4 CUP COCOA
1 TSP. BAKING SODA
1/2 TSP. SALT
1/3 CUP OIL
1 TBL. VINEGAR
1 TSP. VANILLA
1 CUP WATER

SIFT DRY INGREDIENTS TOGETHER FOR BATTER. ADD WATER, OIL, VINEGAR; MIX WELL. FILL CUPCAKE TINS 1/3 FULL WITH BATTER. ADD 1 TBL. CHEESE TOPPING MIXTURE. BAKE AT 350* FOR ABOUT 25 MINUTES (18 CUPCAKES)

While these bake, the cream cheese mixture gets in the middle of the cupcake like a filling. They are really good and the cupcakes is super moist.

The recipe that I have is from Land O Lakes and is called Caramel Shortbread Sticks.

Caramel and pecans flavor these rich shortbread sticks. Sorry, no mention of choc.! If you still want the recipe, let me know and I will post if for you.

I wonder the same thing. Maybe it's to balance the sweetness of the choc. and the filling? It's only 1 tsp. of vinegar but you wonder if it makes that much of a difference!
