Large eggs? When using my Mother's tradional recipes, I wasn't happy with the way they were turning out. Then, I had a flash of understanding! Most of those recipes were developed when we had our own hens. Naturally, Mom picked the biggest, prettiest eggs when getting ready to bake. When I switched to what the store called "extra large", everything turned out the way I remembered Mom's goodies. Now I only buy extra large unless I can't find any that day - in that case I add an extra egg to the recipe.

Frances - that's something for me to think about. Now, for all use including baking, I buy the "Large" eggs. Large - hah! I'm going to get brave and add an extra egg when I'm making a big batch of something. Thanks
