Nikki, I found a South Beach Diet book at a flea market and bought it.  Tried the diet and with a few modifications, I found it really easy to follow.  Basically, cut the carbs and sugar for two weeks.  This first two weeks cuts the belly fat.  I also lost a bit where I sit!! I'm stuck at 11 pounds off now.  Originally it was about 13.  Guess that class reunion did me in.

I am so concerned about dieting.  UGH.   I haven't worried or been too concerned about my horrible weight, but about 3 weeks ago a routine annual trip to my optometrist was horrible.   I have macular degeneration so I must lose weight.
And I must exercise, eat greens - kale and spinach, take expensive vitamins, and so on and on and on.

For you dieters....I know this will sound silly and unbelievable; but it worked for me.  My older (and smarter Brother) told me that he would drink a glass of ice cold water before each meal.  He said he lost over 50 pounds in one year.  I laughed (LOL), how was a glass of ice water going to help me to lose weight?  But to keep him happy, I said I would try it!  One year ago, I weighed 183!!!  EGADS!!  When I was at the Doc's office on Wednesday, I weighed 148!!!!  Still would like to go a bit lower (I'm not even 5 foot), so I am still drinking the ice cold water!!  I used to drink a lot of soda pop.....I do not drink that any more.  Perhaps that has something to do with it.

Cranberry walnut oatmeal cookies and a chocolate, coconut, graham cracker, walnut and sweetened condensed milk.  Can't remember the official name and I'm too far from the kitchen to grab the recipe.  I got it from one of you awesome folks on this site!

Hi Bakery -- Right now I have that fantastic Cranberry Walnut Oatmeal recipe taped to the front of a kitchen cabinet -  It's one of my next projects -- a really great cookie.
I don't think I have the Chocolate Coconut Graham Cracker recipe ....... love to see it.

The ice water does several things.
1. quite often when you think you are hungry you are dehydrated.  Your body recognizes "hunger" before thirst so people eat rather than drink. 
2. The glass of water fills quite a bit of the stomach so you feel full faster. 
3. The ice water needs to be heated and your body uses energy to raise the temperature of the water. So you are expending a few calories to raise the temperature of the water before it can be digested.

No carbs!! No sugar!! for 2 weeks.....that would probably be the longest 2 weeks of the year. 
I will try it. I think I will try it...
Problem is the weekends.  
When I was dieting to loose my 100 plus pounds I was very careful and continued with the diet through the weekend.  Once I got off most of the weight I allowed myself to splurge on the weekends.  I have to stop the weekend splurges. And I have to get back to exercising.  I was thwarted when my Curves closed and then foot surgery.  I am recovered,  I have a treadmill and no excuses.

Nancy, I haven't given the recipe but will if you guys want it.  I'm sure there are several versions out there.  The one I made had coconut, pecans, white chips and then smear chocolate chips on top while it is hot.  I'll dig it out and post it tomorrow.  I had a horse show today and luckly me got to ride early while it was still cool, but I had to get up at 0 dark 40.  I stayed all day and it got pretty hot.  I"m sort of wiped out right now.

It's still hot here so I did not turn my oven on -- I've been doing that and really feeling the heat.
So this afternoon I made 4 batches of peanut brittle.

I'm going to make some cookies as soon as I get my load of towels hung on the line.  This is a perfect day and i expect they weill
dry in a very short time.  It is cool enough to bake.  In fact it was 40º this morning at my house.

Chocolate cake - box mix - yipes.  Once baked, poked holes in it with a wooden spoon handle and poured a heavy caramel sauce into the holes.  I use one heavier than the sauce used over ice cream.  Had to heat it to get it to thin down to pour into the holes.  Have it in the fridge to rethicken the caramel.  On top goes a whipped cream frosting that starts out with low fat cream cheese, sugar, vanilla and almond flavorings and one pint of whipped cream.  Found that recipe on this sitefrom a fellow baker.  Makes a great frosting.  Sprinkled that with heath bar bits.  Will taste this at a surprise party for my neighbor being held tonight.

Hi Bakery --For years  I've been making something similar.  I bake a chocolate cake mix in a 9x13 pan - when it's cool poke holes all over it and dump on a jar of Smucker's caramel ice cream topping.  Then dump in a can of Eagle Brand Sweetened Condensed Milk.
Frost it with a carton of Cool Whip and cover that with shaved chocolate or chopped nuts, crushed peppermint -- whatever you want.
Please, I would love to have the recipe for your topping.  Thanks
And - what is the caramel sauce you use?

That's kind of like a pineapple/coconut cake I make.  Use a white or yellow cake, poke holes and pour  a can of cream of coconut mixed with a can of sweetened condensed milk.  Add a layer of drained crushed pineapple and top with coolwhip sprinkled with coconut.
