Today I made some great slow cooker/crock pot soup.
That meant a later than usual dinner but it was worth the wait.
And I baked the Mexican Wedding Cake cookies.......
the recipe says it produces 3 dozen but I want those cookies absolutely tiny.
Today I got 83.

Today I baked 3 loaves of pear bread.  I used my zucchini bread recipe and substituted pears and nutmeg for the zucchini and cinnamon.  It is
really good.  I had made 3 loaves last week and took most of it to work and they loved it.  I'm desperately trying to use pears.

I made a big batch of those great Snickers candy bar cookies.  I did hold out 1/4 of the dough to skip the candy bar but add semi-sweet chocolate chips, milk chocolate chips, white chips, peanut butter chips  and dry roasted peanuts.

I baked a homemade apple pie yesterday and we had the last pieces tonight for a snack....those snicker candy bar cookies sound really good.

Yesterday I made 3 more loaves of pear bread.  Ah, what to do with all these pears???  I'm taking 2 of the loaves to work.

I was sniffing around the Baking Addiction site again and found a good looking recipe for Brownie Cookies with a variation for adding coconut and pecans.   As soon as I receive my new Kitchen Air I'll try this.
I hope I DO receive that mixxer while I'm still able to bake!!

Well - I talked to ebay's correction site yesterday evening and they said my questions and complaints were all recorded so I should go ahead and use the gorgeous new Kitchen Aid that I received a week ago with lots of incorrect paper work - sold to someone else (shipped to me), charged to a credit card I don't have, yadda yadda.
So ........... I'm going to be baking again!  I can't wait.
I have a new Chocolate Coconut Pecan Brownie Cookie recipe that I can't wait to try.

Made an apple pie this a.m. before going off to volunteer at the hospital.  Used up the last of the apples we bought in Ellijay, GA on our recent trip.

I tried a new recipe for oven baked macaroni and cheese.  Unfortunately, it was not creamy like the recipe stated it would be and it needed a bit more seasoning.  But, with the oven on the kitchen got nice and toasty.

Nikki - the recipe calls for apple pie spice and I had none ........ I had to run to Walmart so I haven't even stirred up the dough yet.
Here's the recipe from
MY BAKING ADDICTION - a great site.

Apple Peanut Butter Cookies

Yield: about 3 dozen cookies
Cook Time: 10 minutes @ 375*

1/2 cup butter flavored shortening
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1-1/2 cups Gold Medal all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon

1/2 cup grated peeled apple

1. Preheat oven to 375°F. Line a baking sheet with parchment.
2. In a large bowl with an electric mixer, cream the shortening,

peanut butter and sugars until light and fluffy, about 3 minutes.
Beat in egg and vanilla. In a medium bowl, combine flour, baking soda,
salt and homemade apple pie spice. Gradually add the dry ingredients
to creamed mixture, mixing until well combined. Stir in grated apple.
3. Drop by rounded tablespoonfuls 2 in. apart onto prepared baking
sheet. Bake in preheated oven for 10-12 minutes or until golden
brown. Cool for 5 minutes before removing to wire racks.

- Depending upon the type of apples you use, you may end up with a
great deal of liquid after grating the apples. I suggest using only
the grated apples, not the liquid that is produced. If necessary,
lightly squeeze the apples to release any excess juice before adding
them to the batter.
- If you want a little crunch, feel free to substitute crunchy peanut
butter for the creamy.

hmmm -- I wonder why the print of that recipe came out so weird ???
Anyhow ........... the cookies are great!  Really good - really soft and ...... well, very soft.
I'll be making this recipe again  - I'll add more apple pie spice.   The recipe calls for 1/2 tsp -- I'll use a full tsp.

Apple spice cookies sound wonderful.  But I am not crazy about peanutbutter in cookies.  Was the peanutbutter flavor very strong?

Hi Pat ..... in the review* I wrote for My Baking Addiction I talked about how very mild the peanut butter flavor is.  I love peanut butter but I agree with you that it should not be too strong in cookies.

My oven will stand empty for a week as we fly to AZ tomorrow and won't be back for a while.  Then, let the games begin.  Cookie dough will be filling the fridge and the oven will get a good workout!!!
