I'll be making Pumpkin chiffon pie and black bottom rum pie along with apple crisp for Thanksgiving.  The apple crisp is already made and in the freezer, but the other two have to be made just the day before.

In Response to In my oven.........:
Tonight I baked the usual chocolate chip cookies but subsituted white chips.  And I added lots of pecans. And ....... I made a big batch of those great Snickers candy bar cookies.  I did hold out 1/4 of the dough to skip the candy bar but add semi-sweet chocolate chips, milk chocolate chips, white chips, peanut butter chips  and dry roasted peanuts.

Oh yes.  My mouth is watering just thinking about peanuts and milk choc. chips. Glad someone else enjoys mixing it up too.

Just got back from my brothers house he made 100# of homemade sausage,he saved all the pork bones for me,freezing some and the rest will be browned in the oven and cooked in spagetti sauce for about 6 hrs.I'll freeze the sauce for another day when I'm lazy and don't feel like cooking, which seems to be happening more often  :) might as well multi task while I'm baking the pies for tomarrow.

last night I made an apricot cheese pie, but it was a no bake recipe.  Today I am torn between making chocolate chip cookies or oatmeal raisin.

For Nancy G I use the never fail fudge recipe and use white chocolate chips and a cup of crunchy peanut butter.  Boy was it good.  Had to hide a piece for myself as the Grandsons were bagging it all up for their trip back home.

Sounds strange but in my oven now is a trial recipe for a snack.
Toasted garbanzo beans.  I figured I would try them now and if they are good I will make them for the times I need a little "nibbley snack" for a party.
The full recipe is:
2 Cans of garbanzo beans.
1/2 Cup parmesean cheese
1/2 tsp salt (although that probably be eliminated due to the cheese.)
1/2 tsp ground pepper
1/4 tsp cayenne pepper, more or less to taste.
1Tb olive oil.
Drain and rinse the beans.  Allow to dry on a towel.  Pull off any loose skins.
Pour olive oil over dry beans.  Stir to coat.
Combine all dry ingredients.  Shake the beans in the dry mixture until well coated.
Place on a rimmed baking sheet and bake at 350 for 55 to 60 minutes or until beans are dry and toasty.  Shake pan several times during baking.
Cool and store covered.

Ok, they are out of the oven and really do taste pretty good.  I think they do need the extra bit of salt.  They won't replace chips and dip or a bowl of nuts but for a lower fat snack they are pretty good.  I think the flavors that could be added are pretty endless.  They might be pretty good added to a chex type snack mix.
