i don't know nancy

i've never made that cake-------------do you always make it in that type of pan?----------maybe you threw in a little too much of the fruit------or mis-measured oil or other liquid or added an ingredient twice in your rush to taste it again  on a hot steamy day after working at the church-------do you have an oven thermometer?

a lot of could be's ,but a true disappointment

I really have no idea what could have happened.  The cake around the edges of the pan is perfect - absolutely perfect.  It's perfectly baked and really delicious - what a great recipe.  I cut out all the edges and piled them on a plate and spooned out the raw center.   I'm gonna' eat all those edges myself!!
Funny thing is that this has happened to me before.  One day I started early and made two different flavor 9x13 cakes ..... they looked perfect.  I iced them and carried to school at church.  A delighted teacher started cutting them and discovered the raw dough.  We tossed both cakes and I crept home.
I wonder what's happening .......... I have a little thermometer and it says the oven is perfect.

also if you are using the darker coated pans--------you need to lower temp 25 deg and cook it longer-----------------they seem to make the edges cook faster
i've noticed lately that several times i've made a yellow cake mix in my dark pan------lowering the temp --------and they rise very high and are almost burnt on sides----------but when they cool off the top flattens and seems not raw but soft/gooey in all but a ring around the pan

I have two ancient and one new 9x13s ........ all are the light, shiny alumnium.  My 8x8 and 9x9 are the darker stuff but I haven't had a disaster in any of those yet.   
Maybe next time I'm trying a 9x13 I'll use two 8x8s  or 9x9s ???

maybe try lower temp next time------------and turn about halfway ------pans are so funny and recipes don't always make allowances for that---------if i didn't use a lot of cake mixes i might not even know about glass and different pans--because now they list every possibility on the box-------i do use those plain old cheap metal cookie sheets that walmart has with parchment paper for cookies------------otherwise i burn them ------------and i've had about every kind of cookie sheet made and even a silpat pad that i couldn't get cookies done on and it never 'felt' clean to me so all of it went away when my cleaning lady started----------and cleaned out all my cabinets

LOL LOL LOL ........ Nellie. I bake an enormous amount of cookies.  I baked several dozen batches every week.   And I use the ancient, thin metal sheets I treasure.   Oh, in the last year or so I bought 3 of the fancy two (?) level sheets that cost so much thinking I would get even better cookies.  Ha!  These work exactly like my old ones so I use them interchangebly.  
I use the parchment paper for every single batch.    I sure wish parchment would fit the sheets. 

Hey --- I'm not a failure baker, am I?   I make great cookies!!

Nancy, I think instead of tossing it, I would have made it into a "bread" pudding.  At least it wouldn't have gone to waste.  I remember my mother making chocolate bread pudding using stale chocolate cake.  it was very good.
At least you got to eat the edges.

Did you do the toothpick testing to see if it was done in the middle before taking it out of the oven?  Sometimes with lots of wet ingredients you have to bake it longer.  Maybe you were having a low power day.  Sometimes that happens and we don't realize it.  You are a good baker so don't let a gooey cake make you feel too bad..  I've made the same recipe  that sometimes takes longer or shorter to bake.  I'm never sure why, but I always stick a toothpick in.

One of the guys at work brought in some slightly oversize zucchini yesterday, so I made 2 chocolate zuke cakes.  One for us and one for work.  I figured making 2 at the same time used the same amount of electricity for the oven as making one,.  The oven was only on 35 minutes.  My oven preheats faster than any I've ever seen.  I always turn it off at least 5 minutes before cake is supposed to be done.  Funny thing, the recipe said bake 40 to 45 minutes, so i set the timer for 35.   One was done and the other got 5 minutes.  I must have put more batter in one of the pans.

i cut a whole box with scissors to fit  my pans-----------roll them up and put them back in the box  to keep them from scorching--------or catching on fire

judy--------that reminds me of our childhood--------- 'bread puddings'----------------we had a neighbor and fellow church member that worked at shipley's donuts------------and every so ofteen she would bring us a big bag of day old donuts-------glazed----------mom would just make a cooked vanilla pudding and break the donuts up and pour it over them------------no oven necessary--------and very good-----------but my absolute fav was when she brought the cinnamon rolls and did the same

 earlier today 4 bowls of French onion soup were in my oven tomlt lt & brown the 5 cheese  topping .
That was enough for me in this damp& rainy  hot day!!!!!!!!!!!!!!!!!!!!!

I've never made a bread pudding in my life ............ I wish I hadn't tossed all that raw part of the cake.
The edges were completely done and just starting to get too done.
Oh well ....... I love that great recipe and will try it again soon.  I'll bake it longer at a lower temp.

Nancy I think you should blame that on the power company.  I know at times the power is lower, especially if is it hot out.  As far as the "bread" pudding goes, I think my mother used the old cake, added eggs, milk and maybe some bread, vanilla and perhaps a bit of sugar; put it in the oven and baked it.  Really good.  If that happens again to one of your cakes, you know what to do now.

I wonder if I should keep baking cakes.  I have total confidence in my cookies  (hee hee, and I make very good divinity and peanut brittle) so maybe I should just forget that 9x13 stuff.

i just put 2 large paks of pork riblets in my oven---------------i'll eat some ----------and freeze the rest individually on cookie sheet and then in a bag for other suppers

Baked a recipe of Double Chocolate Dream Cookies.   The recipe is on this site.  They are sooooo good.!  Both white and semi sweet chips!

 The only thing I baked, today was 2 bowls of onion soup in the mcrowave ove... So glad I thought ahead& pre-made them on a cooler day; so today I only ha to nuke 'em for a hort ime to heat them up
Hotsoup may seem strange in thisot weather butitreplenishessweatlost sat& fluids& isn' theavy ( better for the body on hot days)
