Here you Angela ---

Apricot Coffee Cake

Drain one aprox. 15-16 oz of apricot halves -- save the juice  (fully sweetened is much better than low sugar)
Beat one very large egg until thick and lemon colored
1/3 cup apricot juice
2 tblsp melted butter
1/2 tsp lemon extract 
2/3 cup flour
2/3 cup sugar
1/2 tsp baking powder
1/8 tsp salt.
cinnamon and sugar
Add the dry stuff to the beaten egg and liquid stuff and beat just until mixed..
Pour into greased/floured 8" pan. 
Cover all the batter with the apricot halves....
they will start to sink - no problem.  Sprinkle with a lot of cinnamon and sugar.
Bake 35-40 minutes in 350 oven.

carol......thanks but that is not what i'm looking for..........i 've tried even using pie crusts but nothing i've tried has ever come out like theirs, and i think it's more the method than the ingredients......but i don't care for the cake mix (sweet) recipes

I'm in the process of making apple cinnamon rolls.  I was going through some recipes and thought it looked good.  Apples are cooked with a bit of sugar and butter.  When they are thick cinnamon and nutmeg are added.  The dough is resting now but I must soon, roll it, spread on the filling, cut into slices, sprinkle with cinnamon/sugar and let rise.  It sounds good.  Hope it is.

Nancy, I mostly use the rapid rise yeast as it goes quicker.  The first "rise" is a 10 minute rest.  Then the dough is shaped into whatever I'm making and then it rises 30-45 minutes until puffy.  We have sampled the rolls and they came out fabulous.  They are nice and light and fluffy with lots of good cinnamon flavor and the apple filling is great.  I think that one is a keeper.

A lot of people think they can't make anything with yeast.  I teach some classes for the adult education group here.  They all are about baking.  In fact one is cinnamon rolls.  I've been doing that for over 30 years.
Secrets to good yeast stuff is don't have the liquids too hot (kills the yeast) and don't use too much flour (makes the dough dry).

Thanks Judy ..... I've tried and tried, followed measurements, read and re-read instructions and it just won't work.
I can't make pie crust either.

I think I'll go make a batch of cookies!!

I've decided I'm making a lemon cheesecake for Easter.  Betty Crocker sent me a calender and each month has a new recipe.  April has a lovely looking lemon cheesecake.  It has lemon pudding mixed into the cream cheese.  It calls for 2 little containers of pudding, but of course I don't buy ready made pudding.  I'll make a package of instant lemon pudding and use that.  Does anybody out there know if the little containers of pudding are instant?  I figured they weren't the cooked kind.

You can make this with a box cake mix,you make up the cake mix and then spread a ricotta mixture over top of the cake mix.You bake it and the ricotta mixture sinks in the middle and then after it is cooled you top it with a cool whip topping.If there is interest in the recipe I will post it.It is really good.I like to make it with my home made ricotta.
