The second Sunday of each month is my turn to make treats for the Jr. Church kids.   I have a busy day tomorrow so tonight I baked a batch of mini-cupcake brownies.  I "hid" a tiny Butterfinger egg, a Rolo or a Reese's peanut butter cup in each one.  I think the kids (and the teachers) will love these goodies.

Nancy, your church is lucky to have you.  You seem to be the baking machine, always turning out goodies for the folks.

i just finished making a batch of oatmeal raisin cookies.  Of course I added walnuts.  I asked my husband what kind of cookies I should make and that was his choice.  I use the recipe onthe QQ oats box but add 1/4 r cloves for a little extra zip

I usually use Quaker's recipe too .  When I want a "fancy" oatmeal I use...........

MARY'S OATMEAL COOKIES
375* -- ungreased -- 56 cookies - 10 minutes
1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1 tsp baking soda
1 heaping tsp cinnamon
1/2 heaping tsp nutmeg
1/4 heaping tsp cloves
2 cups flour
2 cups quick oats.
Original recipe calls for 1 cup raisins.  I skip raisins and add 1 cup nuts.
Roll dough into ball and roll in mixture of cinnamon and sugar.
Bake 10 min, at 375 on ungreased sheet.  
Set on sheet 2 minutes - remove to rack.

Judy - here's another oatmeal recipe that I've posted before and find well worth doing again.   It's a great cookie - one of my favorites.

CRANBERRY WALNUT OATMEAL COOKIES
3 doz. 375'  greased  10-12 min. (6-4)
...................
3/4 cup Crisco (I use half Crisco and half butter)
3/4 cup sugar
3/4 cup brown sugar
2 large eggs
2 tsp vanilla
1 cup flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
2 3/4 rolled oats
1 cup dried cranberries (I use dried cherries or blueberries)
1 cup chopped walnuts

This recipe makes a very chewy, very delicious cookie.

This morning I made a batch of banana raisin muffins (had one banana going over) and a pan of Nestle brownies.  Haven't tried the browniess yet as I made them to take to work tomorrow.  Hope they are good.

In another post I said I used half dark and half regular cocoa.   I mix my brown sugar too .... I use half dark and half regular.   I do love that dark brown sugar.

 On Monday/ yesterday;  I baked:
a dozen PB filled brownie bites
 a dozen  dble. size fudge brownies topped  w/ walnut halves   
 2 dozen fudgie oatmeal cookies  
w/ raisins dates& walnuts
 also a baked potato
OnTuesday(today) I baked  a small deluxe pizza & another baked potato

This afternoon I was cleaning my freezer and found some bags of stuff that need to be used ....... a bag of peppermint morsels and a bag of mint chips.  I'm going to make dark chocolate cookies and load them with the morsels.

I think I posted this before, but here it is again.

Turtle Graham Bars

15 graham crackers (5"x2.5")
1 cup Unsalted butter
1 cup Packed Dark Brown sugar
1 cup chopped Pecans
Kosher salt to taste
12 ounces Dark Chocolate, finely chopped

Preheat oven to 350 degrees F.

Line a rimmed baking sheet (half sheet size) with a silicone mat.  I think you could also use foil.  The nonstick kind might work the best.

Arrange graham crackers in a single layer on the lined baking sheet.

Put the butter, brown sugar, pecans, and a pinch of salt in a saucepan and bring to a boil.  Boil for 2-3 minutes stirring constantly.  Pour the butter mixture over the graham crackers( spread the mixture evenly).  Bake for 15 minutes.  Remove and set aside.

Meanwhile, melt the chocolate in a glass bowl placed over simmering water, or use a double boiler.  Pour the chocolate over the toffee covered graham crackers and spread evenly.

 Chill completely in the refrigerator for about 30 minutes. Cut/Break into bars.

Cook's note: I like to sprinkle flaky sea salt  over the dark chocolate laryer.

Thank you, Barbara ........ that certainly does sound good.  But, for me, it doesn't sound easy Wink ..... But, I'll buy some graham crackers and give it a try.

Tonight at church the funeral of a member's mother was discussed.  We're taking all the needed food to the funeral home ...... I was chosen to take cookies for about 100 people.   
Isn't it a blessing that I have cookies in my freezer, ready to go?

just removed a yellow cake   for my strawberry shortcake
had to bake it early, because it was over 90 here yesterday  and on tap today also
now I have to get to store for strawberries
