A few days ago I baked about 4 dozen deluxe oatmeal fudge cookies w/ PB morsels, semi sweet  morsels, raisins& oats...I also baked a pan of fudge brownies; I have no plans to do any more baking before the holidays so these  items will have to last awhile.Oh yes I thhinkI will bake a crustless sugar free pumpkin pie for meals of Thanksgiving reruns ......I've got al the ingredients &  it should be easy enough to do, giving us the best part of the  of T the  T day feast ..Oh yes; hubby bought  3 turkey drumsaticks I already have my own bread cubes cut& dried for stuffing Even though we will be eating away from home on Thursday; leftovers/plan-overs are planned for the next week and that  includes   pumpkin pie, cranberry sauce&  stuffing; maybe a yam or squash???These are our faves from all the dishes eaten on Thanksgiving &  narrowing the menu choices down makes sense &  simplifies things for me. I just took a batch of Black Bottom Cupcakes out of the oven.  We are going to a pot luck tonight and thought they might go over well.

Today I made hubby's  sister's beef pot roast recipe(w/ onion soup[ mix&  O.J.]It  bakes in a 350' oven .I made a double sized apple crisp to go w/ it using in season apples ; hoping to have enough  leftovers/plan-overs to  go w/ T-day leftovers /plan-overs as a nice change  from pumpkin pie  which when served w/ winter squash  can become  repetitive& boring .

 Yesterday(TUESDAY I was unable  to sign in  to post.....I had baked deluxe oatmeal cookies w/morsels, nuts& raisins also an  apple crisp for Thanksgiving  day &  reruns .......Hubby bought a lemon merengue pie so  I would  not need to bake a pumpkin pie..but I still  hopeto bake one asI really like it.
Today,WEDNESDAY I baked  2  turkey drums for hubby I already have  a BBQ turkey breast for us to share .
Tomorrow (THURSDAY)  I will be thankful for all the good food we eat together  w/ little effort on mypart to  prepare it that day  Smile
 ....sweet  peas w/pearl onions &  butternut squash already  made;I'lljust have to micro re heat them &  make some gravy.
I'll make some hot tea& we'll choose  our dessert: lemon pie or apple crisp (a la mode) if desired.
I love to cook but like doing it on my own time; no rushing or overdoing it
I hope you all make it through the holiday  w/o stress or overdoing it

In my oven as I type is a pumpkin pie and a blackberry pie which is about ready to come out.  I had blackberries in my freezer.  I have found it is so easy and fail proof to make pie crust in the food processor.  I use 3 c. flour, 1 T sugar, bit of salt and 2 sticks of butter.  Process until butter is mixed in and slowly add cold water until a ball of dough is formed.  It turns out so nice that it doesn't tear when rolling and is very tender and flaky--not to mention the time saving.

The pound cake is amazing!!!!
The cranberry cake/pie is good but the almond in the pound cake just makes that so much better!

Today I had a craving for seafood; I baked fish sticks, fried shrimp  &  calamari rings @425' till hot& crispy, served w/ cut spinach it was just what  I wanted  before tonight's  turkey feast

This is easy today...
Turkey in the oven now. 
Soon to go in are the two dressings that I made and sweet potatoes. I guess I should toss in some biscuits. I really don't need them but....
On the stove, potatoes for mashing and green beans will go on just a bit before dinner.

Nikki, I'll probably make if when the pumpkin and blackberry pies are gone.  I love to bake but don't want to get too many things to eat at the
same time  No room in the freezer for anything either.  Since I bought 6 bags of cranberries when they were so cheap, the pound cake is definitely next on my list of stuff to make.

No need to bake treats today, still plenty  left from the last baking day.
I baked a few chicken eggrolls  for  lunch& dinner ; took the chill  off our home & tasted really good w/ my homemade duk sauce( apple, pineapple plums & apricots w/ sugar & a splash of mild Japanese  rice  vinegar.

 No plans or need to bake today  but  I  did bake an old fave (blueberry muffin) from a national weight loss  program  .I  could not find the old recipe &  instead trusted my memory ,using up one slice of lite sliced bread, one egg =, a splash of vanilla & one pkt of sugar substitute .It was a little different but still as tastey as  I recall, still highly nutritious, low fat&  low carb, less than 100  calories for a nice  Sunday  brunch treat.

I had never dreamed that I could freeze this stuff - but it works.

Oh, Nikki -- sorry, I mis-spoke.   I meant that making Christmas merry for me is finding a way to give goodies to lots of people.   I love this sugary baking stuff and need to find somewhere to use it.
