Ann - I hope you sleep better tonight.  And when you have time - tell me about white chili.   I've seen it all over the place but have never tasted it.

I haven't made this for a long time so I decided to make it Friday afternoon.  I had Bisquit, so I made a Coffee Cake.

Here's my

Apricot Coffee Cake

Drain one aprox. 15-16 oz of apricot halves -- save the juice  (fully sweetened is much better than low sugar)
Beat one very large egg until thick and lemon colored
1/3 cup apricot juice
2 tblsp melted butter
1/2 tsp lemon extract
2/3 cup flour
2/3 cup sugar
1/2 tsp baking powder
1/8 tsp salt.
cinnamon and sugar
Add the dry stuff to the beaten egg and liquid stuff and beat just until mixed..
Pour into greased/floured 8" pan.
Cover all the batter with the apricot halves....
they will start to sink - no problem.  Sprinkle with a lot of cinnamon and sugar.
Bake 35-40 minutes in 350 oven.

Sounds great.  Now to check the pantry to see if I can make it right away or will I need to put ingredients on the grocery list for next trip.

Nancy I'll make your apricot coffee cake.  My Kroger store had a huge sale a while back on canned fruit, including apricots.  I haven't used them all yet and now I know why.  I must have been waiting for your recipe.
I made chocolate muffins yesterday and they really weren't too much like cupcakes.  They had some bitter sweet chocolate along with the cocoa and not a lot of sugar.  Quite good.  Nice with my mid morning tea.

I LOVE this apricot coffee cake .....I don't share - I eat the whole thing myself.   The first times I made it, years and years ago, "large eggs" were large.  As the years went on eggs got smaller.  Now, for this recipe, I use two eggs.  I have no idea if that's right or wrong.

Nancy,  I just printed your apricot coffee cake!!! I will have to try this soon!! You are
right about the eggs. I use extra large eggs because they look like large eggs. I use
large eggs for the divinity and newer recipes.

I usually make dinner on top of the stove.  I don't bake much except for the occasional cookies for my husband.

Right now I have really large eggs.  My neighbor has ducks and she has waaay too many eggs so she gives some to me.  They are so big the lid of the egg box won't shut.  I love duck eggs.  They are great for hard boiling as the shells are so thick they never break.
