My youngest granddaughter is staying with me for a few days while my daughter is taking her older daughter to auditon for colleges in Dance. While at Costco the other day, my husband and I found a Nestle book on cookies. It was like a children's book, heavy cardboard pages with recipes for cookies on each page. I bought it for this granddaughter thinking we could try some of the recipes.Yesterday, she looked through the book and found a recipe for S'more brownies. Unfortunately, it called for a brownie mix, which I did not have, but we decided to make our own brownies and adapt the recipe. We found a recipe for plain brownies in the book and proceeded to make them. Unfortunately, I did not have the liquid unsweetened chocolate packages (made by Nestle) that it called for. So, I just melted the butter, as called for, with squares of regular unsweetened chocolate. That worked OK, but the dough was pretty stiff even though we used extra large eggs instead of large eggs. In fact we had to pat the dough in the pan over the graham crackers instead of "spreading" the dough. After the baking we followed the directions and added the marshmallows and graham cracker pieces, broiling them until brown, then sprinkling with more chocolate chips. The problem came when I decided to put the brownies in the refrigerator as they were a gooey mess to eat. Now the topping on the brownies comes off. Oh Well, they still taste good, and If you hold the topping on with your fingers you still get the "idea". I'm sure they will be eaten in any case!!!
