My husband gave me a fancy George Foreman grill for out anniversary.  I'm trying the baking pan with brownies right now.  It will be interesting to see how they come out.  it also has a 6 cup cupcake insert.  I'm thinking one would have to make really small volume cupcakes or they would hit the top element.  If it works for brownies it would work for other bars and not heat up the house like having the oven on would.

Here's the results from the George Foreman grill brownies.  They actually came out pretty good.  The only thing is they didn't have the crispy edges I like so well.  Definitely a good way to not heat up the house if one wants to bake on a hot day.

In my oven soon will be Zucchini Cobbler.  It really tastes like apple and if you don't tell those folks who say they don't like zucchini, they won't know the difference.  It is a good thing to make when you find zucchini on your doorstep or in your car.

Judy - I agree about not telling people that you have zucchini in your baked goods.  I used that "trick" quite a bit when my children were small to get them to eat zucchini bread, muffins, etc.  When they got a bit older and would help out in the kitchen they learned my secret, but by then they loved the baked goods too much and went right on eating them.  Now they ask for my zucchini recipes for their own homes.

Here it is - almost 6 PM and the temperature is still 91*.   That's too hot to bake and I keep thinking about apricot coffee cake.

Baking old fashioned Raisin Filled Cookies.  My husband and our children grew up on these cookies.  They bring back fond memories of their grandma who was my husband's wonderful step-mother.  He was only 8 when his father remarried.  Hubby needed a Mom and his dad picked a great one.

Glad to share this recipe from another baking site:

RAISIN FILLED COOKIES

1 cup packed brown sugar 1/4 tsp ground nutmeg
1 cup white sugar 1/2 tsp salt
1 cup butter or margarine, softened 3 Tbs buttermilk - I make my own with milk and vinegar or lemon
3 eggs FILLING:
2 Tbs vanilla 1 Tbs cornstarch
5 cups all purpose flour 3 Tbs all purpose flour
1 tsp baking powder 1 cup packed brown sugar
1 tsp baking soda 2 cups boiling water
1 1/2 cups seedless raisins

In a mixing bowl, cream sugars and butter.  Add eggs, beating well after each addition.  Add vanilla.  Combine dry ingredients: add alternately with buttermilk to creamed mixture.  Mix well.  Chill.

Filling:  Combine cornstarch, flour and brown sugar in a saucepan.  Add water, stirring constantly.  Add raisins; stir and cook until mixture comes to a boil and thickens (about 3 minutes).  Cool.

On a floured surface, roll dough and cut into 3" circles.  Spoon 2 tsp filling on the circle and top with another circle.  Pinch edges of circle together and cut a small slit in the top.  Repeat with remaining dough.  Place on ungreased baking sheets.  Bake at 350 degrees for 10-13 minutes or until lightly browned.

Today I had 2 bananas that were about to go over the hill, so made a double batch of banana chocolate mini chip muffins.  Only takes 15 minutes to bake, then turned the over down and put in a batch of granola.

I had planned to bake brownies w/  dried cranberries &  pecans when the recent heat wave ended yesterday OR today;It's still here& I'm not baking !!!!!
Instead  I  thawed out homemade  cheesecake&  mud pie ; either topped w/ vanilla bean ice cream sounds yummy& cooling

Great way to start the day ...... I have that delicious Coconut Pineapple Banana Walnut cake in my oven .... It will be ready to frost in less than half an hour.  I can't wait.

I've been an avid baker for the past 10 years or so and my specialty has always been cookies! When is comes to cookies one thing that is necessary to have is a Kitchen Aid Mixer.
