Nancy - Thank you for the recipe for the Cinnamon Pound Cake.  That sounds so good and easy.  I, too, would add a lot more cinnamon.  In my family it's the more cinnamon the better!

My daughter made Salisbury steak, mashed potatoes and corn tonight!  Kinda nice when someone else does the cooking!

Hi Cheri -- that recipe makes two 8" loaf pans.  I took the "extra" loaf to a neighbor and she was very happy with it.

I made a big batch of those great Snickers candy bar cookies.  I did hold out 1/4 of the dough to skip the candy bar but add semi-sweet chocolate chips, milk chocolate chips, white chips, peanut butter chips  and dry roasted peanuts.

Oatmeal Scotchies were such a hit at a gathering last night that I am including it in the cookbook our church is compiling.  I was surprised by how many people were unfamiliar with this crunchy delight!

Hi Martha -- welcome to VBB.   Those Oatmeal Scotchies are a treat.  If you like butterscotch morsels look around this site and find Judy's Rice Krispie Fudge Squares ............. sort of like a krispie treat made with butterscotch chips, peanut butter and a chocolate filling!!

I have been making that cooked frosting for years and it is wonderful.  almost like the filling that is in the snack cakes, Twinkie, Ding D0ng's and the like. (I can't believe the filter would not let me use an o so I had to use a zero)
You just have to remember that you have to beat the butter and sugar a lot before you beat in the cooled flour paste mixture.  And my directions say to beat it in a spoonful at a time.
If you want to make chocolate I have added 1/2 Cup of chocolate chips to the hot flour milk mixture and stir it until the chips melt then let it cool.

In the clearance aisle at Walmart I found 4 boxes of cookie mix --Chocolate Peppermint Whoopie Pie Mix, vanilla buttercream frosting mix and peppermint crunch .. .Makes 12-15 whoopee pies. A Christmas decorated box with an expiration date of Oct., 2014.   I bought all 4 but haven't tried them yet.    My very first Whoopie Pie attempt and it's from a mix!!

Nikki, it is amazing what words the filter won't let you use.  These are perfectly decent words.  Filter must have an evil mind.

Whoopie Pie!!! Whoopie Pie and you didn't invite me!!!!
By the way the cooked frosting makes a great filling for Whoopie Pies.  Nice and fluffy.  That is what I used when I made the Pumpkin Whoopie Pies from the King Arthur website. I have also used it for Chocolate whoopie pies.
Let me know how you like the whoopie pie and how the mix is.

I must admit that I have never had a Whoopie Pie and that I'm not sure what it is.  Is it a type of cookie?  Ooh, I'm afraid my ignorance is showing!

Cheri -- I never ate one in my whole life.  One of the kind members of this site will soon show you a photo of this cookie.  They are "sandwich" cookies ..... a cream filling between two cookies...... much larger and softer than something like an Oreo.

Nancy, I got the recipe from this site but I was a little disappointed.  I like that it has more of a shortbread crust but I felt that the crust was too thick.  Next time, I'll watch out for that.  Also, now that I know the recipe, I'll add more zest and more lemon juice.  I like the pucker of lemon without too much sour going on.

My husband will be making oatmeal cookies tonight loaded with diced almonds and Nestle Toll House morsels.  We are going to put them in cellophane bags and donate them to the Dan Gambardella Memorial Fundraiser event this Saturday at Phelps Lane Park in Babylon, New York.
